Q: Frozen leftovers that contain potatoes always come out with a bad mushy texture. Is there a way I can prevent this?

Editor: Mushiness and mealiness can definitely be a problem with freezing potatoes. The water in the potato forms crystals when frozen, which then result in a loss of texture when the potatoes thaw.
Cutting the potatoes into smaller pieces or even shredding them can help make the loss in texture less noticeable. Some people have also had success parboiling the potatoes before freezing them.

I read recently (now I can't remember where) that mashed potatoes will freeze better if you add a raw egg to the mixture. I haven't pulled the shepherd's pie out of the freezer to test it yet - so I can't verify the results. It might be worth researching though! :)
