I am currently on a food sensitivity diet and can only eat specific foods that don't cause a reaction. I was hoping to make some bread recipes using spelt flour. However, every recipe is saying to mix the spelt with wheat flour, and I am unable to eat wheat flour. Any ideas?
I am currently able to eat spelt, millet, kamut, rice, tapioca, amaranth, rye, quinoa, corn, buckwheat, barley, and garbanzo bean flour. I have been unable to find any suggestions for alternatives to wheat flour that would be best suited to mix with spelt to make a good bread. Do you have any ideas?

Editor: You might try replacing the wheat flour with some gluten-free flour mix, as it sounds like many of the flours on your "okay" list also show up in popular gluten-free mixes. Take a look through this post for some favorites:
