Q: What's the best kind of cheese to mix into meatloaf? I'm looking for something that will stay in place when it's done cooking, and not overly melty.

Editor: Though I don't have it often, meatloaf is one of my favorite comfort foods. I've never made it with cheese, but I can only imagine that it makes it even better. Cheeses like mozzarella, gouda, and fontina all seems like good choices for meatloaf. Also consider layering the cheese in the middle of the loaf, rather than mixing it throughout the meat.
