Food trends come and go and although cake pops are still hanging around that doesn't mean there aren't new trends on the way. Want to know what the senior editor for Nation's Restaurant News thinks will be the next big thing? Heavens to Betsy please tell me it's not beef feet!
Oh but it is! There's a list of fads and predictions listed, but one of the most curious is the use of traditionally less than desirable cuts of meat. Restaurants and home cooks might use these cuts for financial reasons, but in the foodie world where everyone is looking to eat something new to them (and everyone else), this seems like a quite logical direction to turn.

Nothing new here. These trends have been around for a few years already.
While these trends certainly aren't new I am glad that people are starting to open their minds regarding the cuts of meat they're willing to eat. Much less wasteful this way and a lot of delicious dishes can be created with what a lot of people consider scraps.
Oh please, oh please don't let my favorite cheap cuts of meat end up getting expensive like flank & skirt steak did. I like being able to get shank bones for pennies on the pound.

I think the cheap cuts becoming more popular in restaurant culture doesn't necessarily directly correlate to their cheapness, so much as whole animal butchering really coming back into style.
Where I work gets a whole hog once a week, and we use every little bit, even (especially) the trotters ;)
I am happy to see carnivores becoming less picky about the cuts they prefer and doing interesting things with cuts that have been long ignored and often discarded.
Beef feet are totally underrated! I'm Pakistani, and one of our best dishes is a stew made with these; it is so incredibly rich and flavorful. I'm glad to see them getting the attention they deserve.
I hope this will come true! And I am a vegetarian. But its just such a waste to throw away food in general and especially considering the ecological impact of the meat production and the increasing difficulties feeding the earths growing population while facing climate change and other environemental problems. If so much food ressources are used to feed animals just for a few pieces of meat, then it seems the only decent thing is to not wast anything.
Whole animal eating is great, but I like to use the "economy" cuts, because they taste great, and are a great price... Whole animal eating has been pretty popular here in the UK for a while - Ferguson Henderson does an excellent job on that front, and the increase in the last 8 years or so of European immigrants to the UK means that they have brought their demand for their country's "delicacies" - I remember being a bit flummoxed by pigs tails in the butchers - and still am! There can't be much meat on one, and just the sheer number of tails... So many piggies worth! (after all, it's not like each pig has four tails...) ox tail and pig cheeks are now considered something fancy by foodies, and it's frustrating, as it puts the price up to people who want to make something at home!
Maybe this will encourage more would-be vegetarians to stop eating dead bodies!
