today was all about the pb&j! easy, filling and delicious :)
I often make batches of soup on the weekends and then freeze them in portable containers to take to work. So easy and if i'm running late i just grab it and go. If i take them out first thing, they're usually thawed by lunch (if not we have a microwave to use) plus it helps in the spillage factor. Tosca Reno's black bean soup from her Eating Clean cookbook is one of my favs!
Quinoa salad (Cranberries, chickpeas, mint, lemon zest & juice, olive oil, coriander and s&p) with a side of grilled chicken. So good for lunch at the office.
Leftovers! Pinto beans with cooked radish and arugula greens, tomato, cotija cheese, and (the big flavoring agent) leftover drippings/sauce from braised pork belly I made last weekend. Other than the beans, everything was leftover ingredients that needed to be used and not go to waste, but it ended up being awesome - still awesome the second time around.
Well, it's only 10:00 here. :-) I still have a month of vacation, so I'm eating at home--leftover casserole of sausage, eggplant, and tomatoes.
Salad is my go to lunch. Today's salad is topped with a little bit of leftover eggplant taco meat and spicy eggplant.
Nothing. I ordered a vegetarian <chickpea> curry, and forgot to check the container before I went back to work. It was a chicken curry.
packed a kale/swiss chard salad with carrot cashew slaw, green peppers, blueberries, and a homemade orange ginger dressing - apple as a side. had some leftover club crackers at my desk. AND a co-worker brought in a tomato, zuchini tian to try. today was on point.
Halibut over potatoes, carrots, and green beans sauteed in pastrami. My work caffe is amazing.
The best sandwich ever made (at least by me): --sourdough bread;
--a once-in-a-million organic, farmers market tomato that I bought yesterday, which was the color of an American Beauty rose;
--organic arugula,
--homemade pesto and
--fresh mozzarella.
That tomato was so beautiful that when I held it up to buy it, the sales staff at the booth all gasped at its beauty. The rest is going into dinner tonight, an eggplant curry.

stuffed into a lightly toasted whole wheat pita with some spinach, feta, and avocado! Delicious!
grilled cheese and chicken soup - not feeling super
boring salad from hospital cafeteria salad bar: mixed greens, broccoli, cauliflower, matchstick carrots with olive oil and red wine vinegar.. and a bag of doritos. would have much rather had creamy polenta, sauteed arugula and garlic, and spinach & feta chicken sausages from dinner last night, but we ate it all ;)
leftover beef-less stew (hearty stew of potatoes, carrots, tomatoes, mushrooms, and veggie burger crumbles). Yum!
egg salad sandwich, handful of walnuts and raisins for the mister, sauteed peppers & onions with chicken and curry and a peach for me. Now I'm hungry again
Leftover stuffed pepper filling (ww couscous, tomatoes and pork sausage) thrown over greens to make a salad. Nectarine for 'dessert' (gotta have me something sweet after I eat).

I haven't eaten lunch yet (not even noon yet here), and will be going out to get a sandwich of some sort, I think. Then eating in the sunshine! My office doesn't really have a break room or anything, so when I bring my lunch I end up eating at my desk, something I don't like to do. So going out gets me away from the office and away from the stress. I miss bringing my lunch, though!
well... i skipped breakfast and had some spinach green and tomato orange bowties with butter and sea salt.
In a moment of hurry I took my husband's lunch and he was 'forced' to take mine. He called shortly after lunch acclaiming how much he appreciated a break from his everyday sandwich. The lunch I packed for myself - peppery bulgur wheat salad, grilled chicken, cilantro corn salad, heirloom tomatoes with olive oil and salt. The lunch I had - ham and cheese, with mustard and lettuce on french bread.
Still dreaming of the lunch I packed but not eaten....
Left-over chicken fried rice from last night and an apple. It was okay...the proportions for my homemade teriyaki sauce were a little off last night and it was a bit vinegar-y for my taste (though my husband loved it).
Lunch is almost always some one-pot combo of carb+protein+veggies, whether it be rice, pasta, or couscous.
Leftovers for me too, I had an enchilada stuffed with cheese, potato, onion and peppers and with a red chili sauce and some black beans that I had in the freezer. I'm not gonna lie, it was pretty awesome.
An empanada with a pulled pork, tomato and spinach filling + carrots.
I had a bit of ratatouille with a dab of goat cheese and a big fennel, zucchini and arugula salad (from Super Natural Every Day by 101 Cookbook's Heidi Swanson). So summery, so delish.
I microwaved an onion, cut side up, topped with butter. Yummy!
leftover homemade chicken soup w/ some gf breadsticks - yummy. And then a slushie from Kwik Trip - i deserved a reward ;)
Leftovers. Dab baked with tomatoes and onions over brown rice with a side of sauteed squash.
Leftover, but beautiful bowl of Eye of the Goat beans with a slab of cornbread. And kids leftover raw broccoli.
Leftover asian salad: cabbage, onions, carrots, mushrooms, babycorn, tofu, peppers, ramen noodles, all tossed in seasame oil and rice vinegar. Its salad week in my house!
Leftovers here too - last night's "Cajun" pasta dish: chicken, chicken andouille, onion, green and red peppers, garlic, Cajun seasoning, sour cream, bacon, tomatoes and fusili. There was enough that I might have it for lunch again tomorrow!
Snack of Siggi's plain mixed with some raspberry jam from the office kitchen at 4.
Leftovers! Fresh corn risotto from Food and Wine. Delish! I skipped the extra butter and cheese today and couldn't tell the difference.

I had a lunch meeting today and they provided it. I had a sandwich (chicken salad with cheddar, lettuce, and tomato), a bag of chips, an orange that had seen far better days, and a cranberry oat cookie.
I had shahi paneer and rice. I make up a huge batch and freeze it in containers. Then for extra kicks I had a toasted waffle point with Nutella on it. Yum.
Leftovers! Grilled some sourdough bread, open faced w/ butter. Topped with shredded cheese, tomato, spinach and sliced chicken.

Tuna fish salad with a cut up peach. Handful of walnuts. Packed in the little bento box I bought in Tokyo this summer (then saw here in NYC at Pearl River...grrrrr)

Highly recommended--has a ton of veg in it (I used more than the recipe called for) and tastes rich, but isn't super fat-laden.
Farro with roasted vegetables (eggplant, zucchini, bell peppers, onion) and marinara sauce, a little parm cheese on top, a peach, and an oatmeal raisin cookie. Very satisfying.
Most of my lunch came from a farm just five miles from my home: yellow wax and green string beans cooked with gorgeous Italian frying peppers, tomatoes dressed with my homemade yogurt dressing, and cantaloupe. Some cheese and a piece of baguette rounded things out.
I planned to have an instant oatmeal that I brought to work today. But it bursted all out of a cup in microwave. So I cleaned the mess and had a chocolate bar from vending machine for lunch. Which was good, but not what I needed. :(
I love reading everyone's lunches! I am getting good ideas! I had leftover cannelloni beans sauteed with spinach and oven roasted cherry tomatoes with goat cheese spread on toast, side of cantaloupe.
p.s. I'm super excited to start filling my new laptop lunch bento box that should be arriving this week!
I concocted a pasta salad but used barley instead of pasta. And I added some chick peas when I read that they keep you fuller longer and prevent snacking.
