green salad with feta, olive oil, and a drop of white wine vinegar, vanilla yoghurt with granola and dried berries, and chips and garlic salsa! Im so full!
Oatmeal!
A very traditional homemade veggie soup. Tomato/Celery base with peas; carrots; kidney, lima, and green beans. It really needed some bread but I forgot this morning.
Thai Kitchen instant soup, but I add fresh bell peppers, zucchini, onion, fish sauce, hot sauce, lime juice...YUM!
sauteed beet greens with a light sage butter sauce.
oooh I am embarrassed to say... but I'm cleaning out my pantry/fridge because I'm moving cross-country next week... so a can of soup, 2 wedges of laughing cow cheese, 2 tortillas, and a Dove chocolate peanut butter promise.
Spring mix salad with roasted chicken, radishes, grape tomatoes, chickpeas, ricotta salata, yellow onion, balsamic dressing, and Maldon salt, which makes anything taste better.

A cup of miso soup, some japanese potato salad, and a piece of leftover Easter candy.
i have been having the worst day - which is just an excuse for the sorry food i ate...
a little tiny bit of leftover mashed potatoes, some strawberries with honey (because they weren't sweet) and then i proceeded to lick all of the chocolate of all of those peppermint sticks that are covered in chocolate, which have been in my desk since chrismas. honestly, i have disgusted myself as well...
but usually, it's a grain salad with fresh fruit.
Not much flair - two slices 2% swiss cheese, non-fat vanilla yogurt, strawberries.
Your tuna salad post yesterday inspired me to bring some for lunch today. Tuna salad on a bed of spring mix greens, and an apple.
Chicken salad, rustic walnut/date bread, and a sliced apple. Apples always taste better sliced.
Rice pilaf w/ almonds & pickled peaches & shredded ham. And I've been snacking on Target's Caramel Cashew trail mix all day. It's addictive.
quinoa, hard-boiled egg, and a marinated bean salad
Salad w/baby spinach, radishes, mushrooms, and sauteed tofu.
Toaster-oven grilled cheese (provolone on whole wheat). Baby carrots that were almost frozen from being shoved into the back of the office fridge. Glass of water.
Then I felt bad about my lunch after placing my bridesmaid dress order for a friend's wedding...apparently my waist measurements are a bit out of scale. Grr.
Salads will be my focus now...grilled cheese s/b a treat anyway, but I was lazy this morning and out of fresh veg.
Ham sandwich and a kasha salad I cobbled together. It was accompanied by a discussion as to how people actually can eat a Carl's Jr. burger for lunch AND still function.
Faux chicken noodle soup with homemade eggplant/vegetable stock because I'm getting over a cold. Eggplant does wonders for thickening/creamifying the broth!

Leftover chickpea and orecchiette soup with 3 egg whites thrown in for added protein (leftover from Sunday's hollandaise sauce) with baby carrots on the side. Very filling.
Wow is everyone here on a diet?
I'm having a bagel with cream cheese, cottage cheese, avocado spread and tomatoes. With some chocolate on the side.
I had a cup of homemade black bean soup and 2 oz. pepperjack cheese on pumper...
Good mother stallard beans and rice, topped with an odd little concoction of sauteed veggies: mushrooms, shredded carrot, diced onion, diced tomato, garlic powder, S&P and a hearty amount of smoked paprika. I also had some fresh pineapple on the side. It was filling and very tasty.
Homemade hummus with carrots and celery, TJ's crunchy curls, dried plums and mango, and a pb&j on homemade multigrain bread. All packed in my laptop lunches box (www.laptoplunches.com). That was enough for lunch plus a 4pm snack.
Spinach salad with radishes, slivered almonds, avacado and salsa for dressing, a cup of miso soup and laughing cow cheese with Kashi TLC crackers. Oh and two pickles and two big green olives!

I was supposed to eat brown rice and asparagus from home, but a co-worker shared his chicken lavosh with red pepper hummus wrap and some tabouleh! Thanks pal!!

Sushi and sashimi. I went out with my sister.
I generally eat a lot for lunch, since I'm most hungry during the morning/afternoon and significantly less in the evening.
Seriously, way too healthy/small of lunches! I had a good old fashioned ham and cheese sandwich, with celery sticks and loads of peanut butter. and a mini-orange (cutie).

@burp_excuzme, Good lord, no kidding. I can't eat just a salad for lunch or I'm ready to eat my arm by 2 pm.
I had leftover "expedited" tagine from this week's Minimalist column. It's fantastic and I will DEFINITELY be making it again. And chocolate. And healthy snacks on both sides of that lunch.
Left over home made chicken chilli and a banana.
Today I had a green lentil salad with orange bell pepper, celery, pea shoots, walnuts and a rice vinegar dressing. One the side were seared marinated tofu steaks dipped in salsa.
A black bean and grilled sweet potato burrito, on a whole wheat tortilla with a little shredded parmesan.
I had a picnic lunch in a bento box, with a little leftover veggie rice stir fry, fresh whole wheat bread, carrot and cucumber slices, and homemade hummus. There was also a compartment with apple and strawberry slices, but the toddler claimed all of those for himself.
Plain yogurt with fresh fruit, orange, and leftover asparagus and penne pasta with a creamy lemon-ricotta sauce. It's just as excellent as a cold salad as it is fresh and hot. :)
Meh, my day turned into something of a fustercluck--my father went to the emergency room, so my mother and I spent the day at the hospital. I had packed roasted vegetables and garlic bread (which spent the day fermenting in my car), but what I actually wound up eating was a roast beef sandwich and yogurt parfait in the hospital cafeteria.
@burp_excuzme Thank God I wasn't the only one! There's no way that a sprig of side salad greens and a sip of milk can satisfy me for lunch. Le sigh.

I believe those lunch program makers are not on a diet...
Pasta salad with walnuts, rocket and apple cubes. Trying to branch out from the sandwiches.
i don't really think it's a diet thing - i just don't have enough energy to make it through the rest of my day if i eat white, simple carbs, or anything too heavy. i keep it light and then do a couple of snacks, but i do find that grain salads with lots of veggies are a pretty good way to keep my energy going throughout the day.
Gotta agree with burp_excuzme...other people must not need nearly as much fat or protein as I do to feel satiated.
A bit of leftover broccoli raab with white beans, half a roll, and an itty bitty roasted sweet potato. In other words, whatever I could get together this morning!
a carrot and grape tomatoes with homemade hummus
followed by a hefty portion of homemade jambalaya.
I'm eyeing the cinnamon sugar pita chips for dessert.

too much, but so delicious. i had two crepes filled w/ mozz, avocado, roma tomato, fresh basil, olive oil, salt and cracked pepper. so yes, i ate an entire avocado and an entire roma tomato in one sitting. but it was so good!!! and half of a brownie. =)
Membrillo and Manchego bocadilla. Sun-filled days always make me (and my gustatory system) reminisce about Spain.
