What are you making for dinner tonight? We are thinking of something light - salads, radishes, greens and deliciously cool protein like the tuna in this photo. This is a rather elegant salad, don't you think?
The photo is by Flickr member ilmungo and while it's rather more formally composed than anything we ever make ourselves, we find the flavors delicious and so right for spring.
It's a Monday, and it's spring. Inspire us! What are you eating tonight? Weekend leftovers? Something ambitious? Something from the grill?

Leftovers from Wednesday night! I'm usually a total leftovers snob but I've been trying to cut down on my grocery bill by committing to a dish and making a meal of it until it's gone. This time it's a tofu and sweet potato curry with whole grain basamati and mango chutney--totally delish, easy and it got better and better every night I had it. I finished it off tonight.
That tuna sure looks yummy though--what an amazing red color!
Mm that looks good! Tonight we're having trout, and I'm trying out this recipe: http://www.epicurious.com/recipes/food/views/232619
We're having the rice, date, cashew, baby greens salad extravaganza featured here a day or so ago with some sweet potato chunks thrown in for good measure (to fill up the bottomless pit that is the bf's stomach).
Pasta puttanesca, but LAST night I made the tofu stirfry recipe that was on this blog a little while ago. It was very tasty--I added cayenne pepper to the cornstarch dredge and that gave it a good extra kick.
Pea gnocchi. Was an experiment. Turned out pretty well. I incorporated some nettles that I picked in the country yesterday.

Easy quick dinner tonight: frozen Kashi pizza with a fresh spinach salad.
