Oatmeal peanut butter cookies for some post-run fuel!
Trying to start using up pantry and freezer goods this weekend before the big move. Thinking about some tuna noodle casserole, tuna meatballs, lentil meatballs for our vegetarian friend, and leftover sage biscuits from the freezer. I think I still have some frozen peanut butter cookie dough which I should probably bake up as well.
I am leaving for a week-long business trip so would like to have some foods stocked in the fridge to make it easy for my husband and daughter to pull together meals at the end of the day. On the agenda: the granola bars shown above and a roasted chicken. The former will be good snacks for them and the latter should feed them for a few days.
Our pantry is in that odd stage where it's still full of food but pretty well empty of my first-choice, everyday-dinner stuff (and of some baking essentials, too), but we also keep getting unexpected bounty from friends' gardens. For tonight's late supper, I'm baking potatoes to serve with creamed spinach-and-chard, tomato soup (leftover), and asparagus (from the freezer).
I was given some summer squash, too, including an ENORMOUS one, so tomorrow we'll be having fritters again, like we do throughout most of zucchini-and-squash season. I'm not tired of them yet; I hope The Fella feels the same!
Just made some healthy coconut carob krispies! Also tried a few new recipes...mini tex-mex frittata and turkey, kale and sweet potato chili!! Will be posted soon on www.bitesforbabies.com!
After cooking like mad all week to stock the freezer, I think I'm gonna take this one off in the kitchen!
Still grillin season here so thinking sweet & spicy honey-grilled fresh shrimp. Might even go bananas & toss some 'smore better treats on the grill as I take up the skewers. Ah...childhood memories...they taste good.
We're off to visit family, and I'm looking forward to going out to eat in a different city a fair amount! But I will be making the Strawberry and Fig Tart from Martha Stewart, and maybe another baked treat. I've been eating very healthfully for the past few weeks... I want dessert!
Definitely the tomato basil soup (crockpot) that's been making the rounds on Pinterest the last few months, sauteed chicken with a lemon sauce alongside some roasted potatoes and carrots for supper on Sunday, a beef stew (crockpot) for suppers in the earlier part of the week, nachos for game day tomorrow, the lazy bolognese from Dinner: A Love Story (to freeze for later), and Smitten Kitchen's apple cider doughnuts. I think my cooking mojo is back. :)
I made Smitten Kitchen's broccoli-parmesan fritters last night, along with a tomato salad (courtesy of a good friend's insanely prolific tomato plants) in a delicious yoghurt dressing. Family obligations may make the rest of the weekend into a series of rushed meals or snatched appetizers, so I'm really glad that my husband and I had a chance to sit down to a calm, simple and veggie-centric meal!
I'm in the mood to tackle a few recipes I've pinned on Pinterest, particularly those involving my favorite fall ingredient: Pumpkin! We've got a beautiful, breezy fall day here in DC, and I'm tempted to try these Pumpkin Poppers. Not exactly a healthy choice, but a little splurge or two (or five ... or ten) never really hurt anyone, right?
Saturday:Greens with smoked turkey, Mac & Cheese from scratch & corn bread (actually done now)
Sunday: French toast & bacon for Sunday breakfast! Dinner is Tamales-red and green with all the fixings (rice, beans, salsa, etc)
And I'm going to freeze the ratatouille I made yesterday for the winter. And make/can corn relish tomorrow. Can't wait!

I was gone all day and have to catch up on the stock up. Pear muffins for Sunday morning, roast the cipollinis I picked up at the market, and...?
Yesterday, we were out and about most of the day, but I made baked chicken breasts and orzo with eggplant from Smitten Kitchen. Then I canned tomatoes--my first attempt at canning! And now I've got the bug, so I'm going to try canning some peaches; I also still have 15 pounds of tomatoes to get through, so I'm thinking some bruschetta in a jar and crushed tomatoes.
I thawed a turkey breast this week, thinking it would be nice during the cooler weather. Well, it's going to be near 90 every day this week, but that sucker needs to get cooked, so I'll make that today.
