Happy weekend everybody! How's the cooking outlook for you this weekend? Do you have plots and plans to stay warm in the kitchen this weekend? I am in the final week of a home renovation and new kitchen install (I can hardly wait to share photos with you!) so I'm dreaming of cooking on a new stove and setting up a new space. In the meantime I'm thinking of rich French onion soup, and gingered pumpkin pie. What about you? What's cooking this weekend?

It won't be much of a cooking kind of weekend, but I know I'm making The Kitchn's roasted broccoli cheddar soup and now I think I might bake up some of the boneless skinless chicken thighs that are lurking in my freezer. Yum.

Braising some short ribs as we speak, in a combination of red wine, pressed garlic cloves, dijon, chopped anchovies, and fresh rosemary.
Tonight's dinner was created from scrids and scrads of leftovers in the fridge and freezer, and WOW was it good. A yeast-dough galette filled with kale, spinach, and mushrooms, single-serving casseroles of mashed roasted squash and sweet potato laced with onion and garlic, pan-seared Brussels sprouts with toasted almonds and brown butter, and avocado slices coated with citrus-soy dressing and sesame seeds. Oh, golly.
I have some apples to use up, too, so tomorrow I think I'll make a pie or tart.

I made Singapore noodles tonight, or at least, a stir-fried noodle dish reminiscent of
Er, not sure why the latter half of my comment disappeared, but I followed the recipe for the sauce for Singapore noodles on Rasa Malaysia, but made it with a pound of bean sprouts, broccoli, and egg instead of pork and shrimp. :P
Tonight I made a very meditative cauliflower soup (from Heidi's Super Natural Every Day). Also on the docket are bison chili (for my partner to eat during the week while I work late); massaged kale salad; and on Sunday it will be sweet potato blintzes with cranberry syrup for brunch and chicken milanese with fennel arugula salad for dinner (both from Smitten's new book!).
Fighting off a nasty cold, so not much on tap this weekend. Started a big pot of "Cheater" Chicken Soup, might make my favorite rice dish on Sunday with Lemon Pepper Chicken if I feel up to it. Comfort food to feed my cold!
My husband is making waffles as I type... kind of boring but it will do for tonight. Tomorrow I have on the menu some Indian Chicken Tikka Masala, and for Sunday some long stewed short ribs with a potato and celery root mash sounds delightful. I wanted to make a homemade angel food cake for tomorrow, but the idea of twelve egg whites has me a little hesitant. We will see.
I hope I'm not cooking one single thing this weekend. I made a huge pot of minestrone soup tonight for 30 of our favorite neighbors--and most everyone else brought food too! We have enough leftovers for at least a week. What luxury! :)
Last night a made a parsnip gratin that was underbaked (ugh). Today, we're having a drop-in open house party, so we're making:
jalapeno cornbread
daifuku mochi
pear blue cheese tart
peppermint patties
spiced cashews
raw turnips with peanut sauce
grapefruit bars
dates stuffed with goat cheese
crab salad sandwiches
pickled carrots
jalapeno poppers
jello shots
Sort of an odd assortment, but we don't care.
Roasted a turkey this week so we had BBQ pulled turkey sandwiches last night, with a side of broccoli.

We're having 101 Cookbooks green rice with lamb steaks tonight with a lovely bottle of white wine. Tomorrow is a salad of cucumber, tomato, avocado and cottage cheese for lunch after a run and tomorrow night will be smoked gammon steaks with a pepper pilaf.

That pie looks delicious!! The only thing I have enough to make this weekend were pesto chicken and mozzarella quesadillas. If all goes well they'll be posted on my blog soon ;-)
I just made a big pot of kasha with onions and mushrooms. I'm planning to have some tomorrow for breakfast with a fried egg on top, and for supper later in the week with baked sweet potatoes and collard greens. Kasha is my winter soul food!

Mmm...that french onion soup smells divine! Or maybe it's the 3#'s of onions in my kitchen on their way to caramelized glory as I type. Nah....it's the soup! Stocking the freezer here too & this just jumped onto my list. Thanks.
Last night was a Mexican casserole & fresh guacamole salad. Also an early b-day cake (lemon poundcake) for dh who'll be traveling on his actual b-day. Today, besides the onions, is a huge pot of Cuban black bean soup destined for the freezer.
Got some fresh greens (kale, arugula + spinach) I need to do something with as well so off to search for ideas. Flyin solo here til Thanksgiving so any suggestions would be most welcome!
