Just made a big pot of red beans, and a big pot of rice. That's being eaten over the next couple days. Sunday, I'm making Chicken Adobo, heavy on the vinegar!
Tonight I'm making Ina Garten's lemon chicken breasts with steamed artichokes. Tomorrow I'm probably going to roast a whole bird, although I might be sick of chicken. If that's the case, I'll do a sausage and goat cheese salad
I've got at least 5 pounds of asparagus from the CSA in the fridge, so I think I'm having asparagus hash tomorrow, then shaved asparagus pizza on Sunday and an asparagus soup on Monday. I also got rhubarb from the CSA, so that's going to go into some more strawberry-rhubarb freezer jam. I'll have to make something dessert-y, too, so maybe I'll finally get around to that lemon yogurt tart.
I'll be carmelizing an onion (yes, it will take about an hour!) to go with tomorrow's pierogis (buying, not making--when there's a Polish pierogi-only deli down the street, well...); rhubarb syrup for pink rhubarb lemonade, and Korean veggie pancakes. I'll also be making stuff for lunches and dinner this week: a cauliflower dal, grating cheese for a requested mac and cheese, sedano e riso soup, green beans in tahini, and roasting some garlic to have on hand. My 6-year-old, an enthusiastic asparagus eater until 2 weeks ago, is suddenly "over" asparagus risotto--she only wants in frittatas. Egad. An asparagus frittata might get on the agenda, in other words.
I have the weekend to myself so I'm mainly wallowing in junk food - I have no motivation to cook for myself. I will be making a big batch of wholemeal pizza dough for the freezer because I've wanted homemade pizza lately but couldn't be bothered to make dough. Ah, laziness.

My last paper of graduate school is DONE! So this weekend will be a cook-a-thon. Already made boneless pork chops with roasted fingerling potatoes and broccoli, boneless chops with smashed green peas, radishes and salt on buttered bread. And on the docket is london broil with dilled potato salad, chorizo tacos with homemade guac, rhubarb cake, rhubarb sauce, applesauce, and celery salad.
Dreaming about local strawberries and asparagus, but they're a ways off still.
It's so nice to have time to cook...
roasted chicken with a chickpea-yogurt-cilantro-tomato goodness (also roasted - amazing how yogurt does at 450) and some balsamic beets. tomorrow will probably be a frittata day, but I want to make some lemon and strawberry scones. hooray for working weekends!
Im making a ton of things i found on this sight! Strawberry basil soda - it's fantastic; home made cheese crackers - delicious with red wine; roasted rhubarb clafoutis - yum! Cornmeal lime cookies - making these today; home made pizza dough for BBQ chicken pizza and margarita pizza. Making the bbq pizza on the grill and baking the margarita pizza on a pizza stone in the oven. Can't wait!
Had a fabulous dinner yesterday with friends, celebrating my new job!! Bourbon-glazed pork spareribs, grilled asparagus, new fingerlings with salsa verde, and a gluten-free rhubarb and almond cake with softly whipped cream for dessert. Not bad for a last-minute celebration! Tonight will be grilled pizza with artichokes, mozzarella, and prosciutto. Spring is my favorite cooking season!
