TW Salt Mill by Wil...

Today I made mango smoothies with coconut milk, tofu and strawberries to take to work this week. Then I made Ani Phiyo's raw almond.goji berry/cacao nib cookies for freezer snack attacks. For dinner, I adapted a Ricardo Larrivee recipe for warm bulgur, broccoli and chickpea salad-- instead of broccoli, though-- I used fiddleheads. Plus steamed artichokes. After dinner, I made masala chai tea with almond milk (and without the assam-- otherwise I'd never get to bed).
Tomorrow I plan to make Thai corn soup, after work.
Sunday... we'll see. Perhaps I'll be lazy.
Well I just made those Vegan Strawberry Muffins and they're waiting for me on the counter as we speak! I'm also making curried brown rice and garbanzo bean burgers and avocado salmorejo from the New York Times website...it's incredible. The avocado substitutes the bread so it's super healthy!! And it is SO nice to have something cold in the fridge during these hotter than hot months in Spain with no AC. OH and I'm gonna make an asparagus fritatta on Sunday for my lunches throughout the week.

There is rhubarb in the fridge that MUST get used. I think it's time I taught the little one to make a crisp, no? It's time she started learned to use a knife. Band aids will be on the counter top. (I hope we don't need them!)
Everything else will be boring stock-ups: make tomato sauce, cook some vegetables so I can pack them in lunches, maybe a granola (I accidentally ordered unsweetened flaked coconut, but it's a happy accident).
Another fairly lazy weekend for me but I will be making stilton and leek sausage rolls (http://www.dailymail.co.uk/femail/food/article-2153364/Lets-party-Royal-Sausage-Leek-Stilton-Rolls.html?ito=feeds-newsxml) to take to a party tomorrow and probably some pulled chicken for burritos and freezing.
Made a salad last night with grilled tomatoes, red peppers, onions and eggplant tossed together with some good olive oil, sherry vinegar and garlic. I made French bread earlier in the week, so I also brushed some slices with olive oil, rubbed them with garlic and grilled them to eat with the salad.
I've also got some rhubarb in the fridge - I think mine might become rhubarb syrup.
I don't know that I'll be cooking much this weekend, since we've got a lot of leftovers from yesterday's Cuban sandwich-fest. I'll probably make a stir fry with chicken and CSA veg for Sunday dinner and do some prep for a Shepherd's Pie on Monday. And I've got strawberries that need a home, though they might just go live in the freezer for a while.
Nothing too exciting: sausage, bell pepper, jalapeño and mushroom pizza; mushroom risotto. The summer has turned to drizzle and gale force winds here in London.
Banana chocolate chip muffins. I had to use up the banana quietly rotting on the counter.
I had a crazy idea to make merangues or macaroons... I'll see how i feel tomorrow afternoon
Middle Eastern style lamb stew with spinach and couscous for our anniversary dinner.
Strawberries, strawberries, strawberries! In jam, in pie, roasted, raw....
And also lots of grilling this weekend.
I made yogurt, strawberry jam, strawberry rhubarb jam & syrup, lemon poundcake, risotto "pie", and a recipe from Victoria magazine for tomato & pesto & goat cheese tartlets with a black pepper crust - I used a cherry tomato confit for the tomatoes. A few items were for a bridal shower held yesterday so today is a day of rest and noshing on the leftovers.
Oops... forgot to comment yesterday! But there was so much great food this weekend I'll share now anyway. Steaks on the grill and a variety of salads on Friday. Saturday was mostly eating out: Lots of snacks at a local italian street festival (pasta, panini and canoli, yum), then dinner at our favourite sushi place followed by some amazing gelato (the grapefruit-campari flavour was so good, it's now a goal to recreate at home). Yesterday was buckwheat crepes with apple cinnamon caramel filling, thick cut bacon, and tons of fresh melon and berries on the side, whipped up a pan of brownies with sour cherries and white chocolate chunks, and also a big batch of pasta sauce with italian sausage and mushrooms for dinner last night, which will also be lunches throughout the week.
I made homemade barbeque sauce and tried it on chicken and burgers...it was a big hit at the picnic I took it to this weekend! I started the weekend off with some white wine sangria, which got the weekend off to the right start too!
