Happy weekend! What are your plans this weekend? Going anywhere special and fun? And is it hot as blazes where you're at? (It's cracking 100 degrees here.) How are you staying cool, and are you staying in the kitchen or getting out? Tell us what's cooking in your kitchen this weekend! We'd love to get some fresh inspiration for staying cool in this scorcher!
Happy weekend, and happy cooking!

I'm definitely going to be making a batch of white wine sangria and probably some ravioli with my new ravioli cutter. I'm also tempted to whip up a batch of my favorite berry muffins.
WW crust pizza with zuke, onion, sausage, mascarpone is in the oven right now. The rest of the weekend will be processing food from my veg box and eating out because it's going to be too hot to cook much.
I'm preparing some veggie sushi. It's simple, quick and cold! I like using wholegrain rice and add carrot, beet, eggplant, mushrooms and anything else my imagination and my stock allow me!
Rib cookoff tomorrow night at a friend's bbq; baby backs-9 entrants, 2 racks per entrant. It should be fun. Its a potluck so I will be bringing my standard fare of shrimp orzo and feta pasta salad. Outside of that, salmon burgers on the grill tonight and kale caesar salad. Sunday will be neapolitan pizza while watching the Eurocup finals. Go Italy!!
Whew, yeah, it's 104. Pesto pizza tonight, although I'm wondering why I want to turn the oven on. We'll have a crispy salad with a tart vinaigrette with the pizza. Thinking about grilling chicken and corn on the cob on Saturday, and having watermelon all weekend. We have left over farrow-pretend-tabbouleh salad to finish off as well. Nothing exotic, just shopping from the frig! (Hmm, is that a lime, tonic, and gin I spy?)
Oooh almost forgot! Our tomatoes are ripening and we have a few to consume this weekend as well. Yay tomatoes!
Good friend coming to visit. New pillows and towels in her honor. Sushi and then introducing her to Jeni's Splendid ice creams. Croissants and creamy scrambled eggs, coffee, juice and fruit for breakfast to see her off on Sunday.
We're having a Pre-4th BBQ, so we're smoking a pork butt and some chickens. I'm making a side of buttermilk mashed potatoes, and we'll serve up some sweet tea and homemade lemonade (a couple Arnold Palmers never hurt anybody). The rest will be provided pot luck style by our friends. I love summer.
It is too hot. I think we'll be eating some cool and easy food like sandwiches and salads. I'll make a pesto-white bean spread, and I made a Savoy cabbage/shredded carrot/peanut vinaigrette salad jar that I'll break out. Maybe some pick-at food like green beans in tahini (great with rice, great room temp). I'll have to stock up for the weeks lunches, but I'm thinking quick-cooking stuff like Indian black eyed pea pancakes and some grain salads that don't take much prep.
You should all come to Brittany, France : it's barely 68 °F here... And raining...So I'm still using the oven with no problem ! Snickerdoodles, strawberry & peach crumb cake, risotto with pea & bacon and maybe some sugar cookies if I receive my new cookies cutters :) Happy 4th of July everyone !
It's currently a hot, toasty... 57 F. Hi, I live in the southern hemisphere XD;;
I'm actually at home alone tonight, so I'm going to mix up some roast veggies (pumpkin, carrots, leek, and kalamata olives with PLENTY of garlic), a (...pre-made) spinach and cheese vegetarian schnitzel, and have some couscous on the side.
Tomorrow, I'm not sure what we're doing for dinner, but I'm definitely planning on making some fruit cobbler - just got to decide between apple, cinnamon, and cranberry, and those mixed frozen berries we have.
Last night we had grilled ribeye with a warm sweet corn/grape tomato/basil salad and a fresh green salad. It was the perfect summer dinner! And biscuits with fresh peaches and whipped cream for dessert. That was enough cooking for me, so probably just a salad or sandwich for lunch today.
Oh man, I'm jealous of those of you with tomatoes already ripening, but I admit I don't envy the heat you're dealing with.
I made breakfast bars for my husband's 200k bike ride, and I think we'll have romesco with focaccia and a salad and eggs tonight.
68F here so with a little planning it's a full pantry prep weekend. The yogurt maker will be cranking, I'll bake a few loaves of bread this evening (levain, honey wheat), and I've got cases & bushels of fruit so I'm in full preserving mode: strawberries, apricots, cherries, lemons. I'll be making jams, curds, dried fruit, frozen fruit and puree and juice, sugared lemon peel and salt-preserved whole lemons. It's my first full year of trying to keep up with the seasonal fruit, every month, and stock a complete pantry. Prior to this it's just been accidental windfalls and last minute pantry sessions.
It's 104 here. I am eating popsicles. And ice water...and popsicles. Is it fall yet?
Winter in Australia and it's one of our coldest ever. So hot dinners for us, tonight pasta.
We made a cocktail with gin, lime juice, soda, mint and blueberry purée. Cool and refreshing for the upper 90s.

It's a pizza theme... I made multigrain pizza (dough from Whole Foods) with basil pesto, grape tomatoes, fresh mozzarella, minced garlic and fresh basil. The rest of my eating involves slicing and dicing fresh produce, red leaf lettuce/cashew/honey/bleu d'auverge (sp) cheese/dried cranberries, and Blendtec palooza with green tea frappucinos, green drinks and fruit smoothies - all blended drinks include almond milk.
Last night was local yellowtail flounder baked with lemon and garlic. Topped with fresh dill from a local farm. Sautéed summer squash from the same farm.
Tonight will be pad Thai made with local snap peas, peppers, cilantro and chicken.
Cold gin lime rickeys with both meals. :)
Friday, I served a few very simple cold dishes to some guests: chilled spinach frittata, red pepper bean dip, homemade pita, olives, a dish of pistachios, and some crispy vegetables: cucumbers, carrot coins, blanched green beans, grape tomatoes. A guest brought blue cheese and crackers, which rounded out the table nicely, and we knocked back several bottles of bubbly, both red and white. I also made cranberry scones for the morning.
Saturday was the Greek festival, but by the time The Fella got out of work, most of our favorite dishes were sold out, so we hightailed it to a favorite local restaurant, where I ordered a Greek-ish platter: lamb, falafel, hummus, and avocado, all served over baby spinach.
Tonight promises to be scorching hot again, and I'm thinking dinner might be a strawberry smoothie.
@Elsa Macbebekin
I really don't mean to seem rude but, just a heads up - Greek cuisine and Greek people in general aren't very familiar with falafel, hummus, or avocado (I personally love all three, though). There's a difference between Balkan and Middle Eastern. :)
Family potluck barbecue here in Colorado, it was well over 100... I brought a chickpea-lemon-parmesan salad, and a tomato-peach-basil salad, watermelon and lime agua fresca (total hit!) as well as some gorgonzola-walnut butter for the steaks. We had a feast, everyone brought awesome dishes! We had strawberry cheesecake, chocolate pecan torte, two pasta salads, potato salad, corn, a spicy black bean cilantro salad... mmmm.
It was Canada Day! We had a BBQ, and watched the fireworks in the next town over, since they're better than the one Edmonton puts on.
