Good Friday afternoon, kitchen friends! What do you have cooking, on this summer Friday? Do you have big plans for your weekend kitchen? Tell us, and don't forget to check out all our new recipes from the past week. And we need to remind you: This is the last weekend to enter Small Cool Kitchens. So if you are planning on entering, don't put it off any longer! Happy weekend, and tell us: What's cooking?

Straw Mat from The ...

Dinner tonight was grilled mackerel with guacamole, toasted bread, blackened peppers and a green salad. The mackerel was so good! Going to slow cook some beef, to throw in tortillas while watching the final stage of the Tour de France. Go Wiggo!
Tonight we made The Kitchn's own Lighter Stuffed Pasta Shells with green beans and an arugula salad. The shells were really wonderful -- we loved the stuffing. I think later this weekend we want to try out a recipe for Thai Green Curry Mussels!

Some kind of crumble - there's a lot of fruit in the house but only two people to eat it.
Peaches-in-hand. This means eating peaches straight-up because we bought the first Ontario peaches today. I can't wait.
Anotherjen: Oooh, a farmer's market trip is in order tomorrow! I snagged some peaches in Niagara a few weeks ago, but they weren't at their peak.
I made kung pao chicken tonight (replacing half the chicken with mushrooms out of necessity, which turned out surprisingly well). Tomorrow night we're going to a friend's place to grill meaty things, and I think our contribution will be merguez sausages. Also planning to make a couple of sturdy salads and some whole wheat pitas that can be eaten on Monday and Tuesday.
A good friend is completing the last of her MO Bar exam studies ahead of the test on Tuesday and I think I'll put something protein-laden together for her. I brought over some homemade key lime cookies last night and they barely made it inside from her front porch! She was happy for the treat and a moment's break - I look forward to my next drop-off :)
I'll be finishing up a batch of mint-pea ravioli, making tofu summer rolls with a new (to me) peanut sauce courtesy of a recent issue of Fine Cooking, and eating lots of peas and greens from the farmers' market. During this respite from our heat-wave summer, I hope to bake some bread and make a big batch of lentil salad to last through the hotter days of the week ahead! I'll also be planning British treats for next weekend.
I'm in that eking-out-the-fridge phase that comes from only making flying visits to the store and farmstand. Friday night: zucchini fritters and an improvised dish of penne in sweet potato & almond sauce with garlic-braised spinach. Tonight, I think I'll oomph up a Trader Joe's frozen squash risotto with (again) garlicky greens and smashed sweet potato, then serve it with an arugula salad.
This evening, I'll also make the dough for the CI beer-added no-knead bread quick, then use the rest of the big bottle to whip up some quick-baking beer bread to go with that risotto. Sunday, I'm bringing vegan black bean dip and corn chips to a backyard birthday gathering.
zuchinni fritters for breakfast, a batch of quick pickles to last us (probably not) for the next few weeks.
we are in md, and are having friends over for steamed crabs tonight, along with grilled corn, slaw and potentially burgers if the crabs don't fill us up...
also making a white chili and blueberry muffins to freeze for a friend having a baby soon.
am thinking i also might need a batch of earl grey tea ice cream as the freezer is getting a bit low on treats :)
Blueberry pie. Spicy Korean cucumber salad. And probably something else. I'm in the mood for a good salad.
Umm... I bought too many blueberries. Blueberry oat muffin tops. Blueberry goat cheese dip. Blueberry lime salsa. Blueberry pomegranate mint mojitos.
Just had the first ratatouille of summer. So good! Earlier made scallion pancakes with the little one--she brought home the recipe from camp and she actually did most of the work! (Now to get her to do most of the cleaning up.) Some very ripe peaches became smoothies, and then popsicles. I have a bunch of cherries that need attending to, stat. Not sure what to make with them. Hmm. Something desserty and fabulous---but what?
Indian, all weekend, prompted by a case of mangos we bought at a local market which inspired us to make variations on the mango lassi.
hi i just wanted to say ive never really read blogs before bc i thought it was kinda dumb but i just found yours and i love it and will probably be reading it everyday :) thanks for the awesome tips :)
having a glut of zuchinni, I opened a few cans of stewed toms and thin sliced the zuchs and cooked them down. after a half hour or so I placed well seasoned fish fillets (cat? talapia? it was a nice white fish) on top of the mix and poached/steamed them. Served them over spinach spagehtti. I also have quite a few ball shaped squash so pre baked them, cored and clean out center. Filled them with a mix of ground beef onion and chesse and rebaked until warm and melty. Hubs2B loved it and he hates zukes. Then made bison meatloaf- did not over cook it for once (makes it terribly dry). Now I need receipes for beets, other than pickled!
