Anything! This last week has been dismal with dinners consisting of frozen pizza and boxed mac and cheese. I can't wait to be back into my normal kitchen routine with tasty and healthy dinners! There's definitely going to be some zucchini in the mix....
Lots of pizza for us this week. We're vegan and recently discovered all the insanely tasty vegan pizza options! No fake cheese for us, just tons of veg. YUM
Today: baba ghanoush (I roasted the eggplants late last night, when it was nice and cool) and hummus --- to snack on tonight instead of a proper dinner, and to serve with cucumbers, olives, feta, grilled peppers and squash, and grilled focaccia Saturday night. After the weather cools down tonight, I'll bake up that focaccia. Other than that, I'm expecting to live on fruit smoothies and ice water this weekend, which is fine once in a while.
Tomorrow we're having a cookout with friends and hanging out in the pool afternoon. They're frying a turkey, and we're bringing a kale and pecorino salad (from The Kitchn!) and a Pioneer Woman pasta salad with zucchini, tomatoes, and feta. Oh how I love summer.

My local seafood store emailed a recipe for cedar planked halibut that I'm going to try. I'm also going to try a new recipe for BBQ beans to go with baby back ribs on Sunday. The weather is FINALLY nice here in the northwest and the grill has been getting quite a workout.
It's freaking cold where I live, so I'm baking bread this weekend (will slice & freeze several loaves), and I'll be trying my luck at reproducing the packaged Vicolo cornbread pizza crust.
I got a wild hair after reading about it in a book-I'm going to make duxelle. It seems like it would be amazing on crackers and such. I also have to make a batch of granola for my weekday breakfast. I'll probably make something else....
Crepes for breakfast this morning, as a nod to Bastille Day! (Filled with a few remaining homemade preserves from last summer.) Then a totally American lunch - hot dogs (trying the homemade hot dog bun recipe from Make the Bread, Buy the Butter), a use-up-the-veggies-in-the-fridge dinner, and whatever inspires at the farmers' market tomorrow!
I just got a copy of Food in Jars from the library, so perhaps some canning is on the horizon, too!
i made a ham & chard gratin for lunch (while it was still cool enough to turn on the oven)
We're heating up--I'll probably have cold cherries and Tom Collinses the rest of the weekend....so nutritious!
Yesterday was a no-cook day, with just left-overs from Friday evening : guacamole, humus, various dips, chocolate mousse, reheated chili. Today saw the end of the chili, and I'm making a Lucullus vealroast for tonight. And something to go with it, with a leek. I have one sad leek in the fridge, waiting to be cooked...
Last night, we had fall-off-the-bone tender pork ribs- half with spice rub, half with BBQ sauce. sautéed farm greens, butternut squash fries.
I roasted a Moroccan-spiced chicken this morning for lunch. Cucumber-radish salad on the side.
Dinner tonight: huge stuffed zucchinis with farmer's market veggies, local pastured ground beef and cheese on top.
