Just made a big batch of Makhani Dal (a slightly modified version of the recipe from 660 Curries, using de Puy style lentils instead of sabud urad), and still need to make some kind of snack to bring on a skiing day-trip tomorrow . . . I'm thinking maybe granola bars? Bran muffins?
I'm going to be making a lovely dish who's main ingredients are pinto beans, chicken breasts (boned and skinned), chili peppers, garlic, onion, and Monteray Jack cheese added at the end and is an old favorite from good friends. Been having a craving for it even though I ate the last of the batch Mom had made, I think last spring/summer.
Takes about 3.5Hrs all told to cook, but so well worth it and is done on the stove and serve it with fruit, or salad and good, crusty bread.
Otherwise, I don't know what else I'll be cooking.
However, I will finally begin a set grocery list that will be in electronic form when finshed so all I have to do is check the check box when I need something and uncheck it when placed in the grocery cart but can also be tweaked when necessary from time to time I add/delete items from it. This way, I can finally stock my pantry so I will always have stuff to cook with at all times, hopefully. :-)
I should say, I ate the late container of that last batch of beans and chicken breasts in November at some point.
Tonight was butternut squash soup with ginger and cilantro, garnished with a bit of scallion oil. And I think that for tomorrow, I'm going to screw up my courage and give Smitten Kitchen's gnocchi in tomato broth a shot; the first and only time I made gnocchi from scratch, they disintegrated, but that was a long time ago and I think it's time to try again.
On Sunday I'm going to be cooking out Cradle of Flavor and I'm aiming to have some leftovers to help get through a very busy week: caramelized tempeh and chiles, Malaccan beef and vegetable stew, and stir-fried bok choy with garlic should provide at least another meal!
I have a large smoked brisket from the New Braunfels Smokehouse that's begging to be eaten, so I need to make sides and get some rolls. Sounds like good football food on Sunday. Maybe an apple/pear crisp and some vanilla bean ice cream too.
I came home to the smell of pan de campagne, my boyfriend's first foray into bread making. A little denser than I expected, but tangy like sourdough.
It's chilly, so I'm making a simple favorite, Italian wedding soup, and I want to explore some miso/udon/veggie soup options. We have leftover shitakes from our tabletop farm, and will probably make a shitake, bechamel pizza with gruyere. Mmmm...
I bought lots of blueberries from the market for cheap and I have a ba of lemons so I made Smitten Kitchen blueberry lemon yogurt pancakes for breakfast this morning and I'll be making her blueberry crumb bars tomorrow to reward myself for marking books. Sweets aside, I want to make broccoli and cauliflower cheese for dinner tomorrow (comfort food for the snow).

We're still on the mend from the flu and my head cold, so, I think something spicy is in order. I have a wonderful recipe for a pizza spaghetti casserole that uses both spicy sausage and pepperoni. I need to make something with all of my bananas in the freezer. And maybe a cake for dessert. Now that all I've had is soup, I'm STARVING for really good food!
The Kitchn's Pork Ragu with Semolina Gnocchi. I also have a beautiful orange cauliflower that I will roast along with rainbow swiss chard. And a pretty blood orange, pomelo, and pomegranate salad to start.

My family could use a little comfort food right now.
Not much! Friday, I cobbled together a dinner from the freezer (all courtesy of our local Asian market): crispy mushroom spring rolls, then vegetable dumplings with seasoned tofu and broccoli, topped with a reduction of OJ and soy sauce. I have a pinched nerve in my dominant-hand shoulder, so I'm taking it eeeeeasy.
Tonight (Saturday) The Fella will shop and cook. When asked for input, I suggested he buy a BIG BUNCH of spinach and let me have an enormous salad with dinner. Though I've been eating a huge amount of fruit & vegetables (50+ servings weekly) I am craving a giant bowl of greens more than anything.
By Sunday, I hope to be recovered enough to knead a batch of baguettes! If not, I'll make no-knead dough to bake on Monday.
Smitten Kitchen's Pear and Cranberry Gingersnap Crumble just came out of the oven, and the Cauliflower and Chicken Sausage casserole is happening too. It is a good day.
Slow here in terms of cooking this weekend as dh is out of town & I've been focusing on the January Cure. Kale + eggs have come to the rescue as I've 'cleaned out my fridge' of fresh items before they spoil along with a couple pre-baked sweet potatoes. Quick, easy & yummy.
Taking a break to head to the market now but tomorrow I'll reward myself with a veggie roast using the last of the fridge items along with whatever's on sale today. I'm thinking a hearty soup for dinner tomorrow evening which can simmer while I clean/organize and also produce a family meal for the freezer to be enjoyed when the dh gets home. Win-win.
I have leftover canned pumpkin on the stove right now, reducing. I always have some leftover after making whatever recipe I bought the can for, and found a cookie recipe (Vegan Cookies Invade Your Cookie Jar) that calls for reduced pumpkin (from one cup to 1/2 a cup). This is a first for me--we'll see.
Other than that? Winter fare: whole wheat pasta with garlicky roasted Brussel sprouts, buckwheat pancakes for Sunday brunch, fried rice with broiled tofu. Another first: going to make tomato soup with ginger and coconut milk instead of my usual evaporated 2%. I love ginger-tomato soup and am crossing my fingers the family will, too.
After all the indulging I've been doing, I want something healthy. I may do my polenta puttanesca with a silken tofu sauce over eggplant. It's rich and creamy enough to make me believe I'm eating something indulgent with fewer calories. I made the Kitchn's slow-cooked bolognese sauce last night and wound up hosting more people for dinner than I expected, so it worked out well to have chosen a dish that made a big batch! Today I just used up some leftover cabbage in a salad with apples and walnuts, but tomorrow's a big cooking day: no-knead rye bread dough is already rising, I'll make a french toast casserole for brunch tomorrow, and the barley risotto with feta from Jerusalem is the plan for dinner.

Some of these posts are making me hungry! I'm going to try a new baby-friendly recipe this weekend-creamy leek and potato soup with coconut milk!
I leave most of the cooking to my boyfriend, but for dessert I have been mixing hot apple & cinnamon oatmeal with some cold strawberry yogurt (dairy-free). Soooo good! :)

Well, I didn't end up cooking anything - about half an hour after posting my comment I started to get feverish and ended up spending the weekend in bed. At least many hot toddies were consumed!
Sunday is meal prep day for the week, plus I got a new stove that actually works!! It was a big day. I made Thai Coconut Curry Chicken soup, Beef gremolata stew, a modified low sugar Korean BBQ taco beef, a Cherry Chipolte Chili, and pastelon. Yum!
Made pumpernickel rye bread from a KAF recipe; yeasted pancakes with blueberries and oven baked bacon for Sunday brunch; and enjoyed lemon-onion-green olive Moroccan chicken (thighs) with couscous and a salad of red grapefruit, purple onions, avocado on romaine for Sunday dinner.
