Enchiladas - still using up Thanksgiving turkey!
We ate out all last weekend so I am antsy to cook some good food at home this weekend. Tonight is homemade pizza with kale salad, tomorrow is chicken cacciatore and Sunday will be smoked St Louis style spareribs to take to a party for the Big Game (GO NINERS!). I really want to try the oatmeal with apples and cheddar posted here a couple of weeks back so I am planning that for breakfast one of the next two mornings.
Chicken n' biscuits tomorrow night. Nachos for the big game. Maybe some oatmeal in between?
Saturday evening will be spicy Chicken Enchiladas with a Citrus Salad. For the big game on Sunday (Go Baltimore!) a pot of delicious Pulled Pork Bbq with Creamy Cole Slaw and Potato Salad. Honey Oat Bran Muffins just came out of the oven...smells wonderful in my kitchen!

I have cinnamon apricot pecan bread rising right now, will retard the loaves overnight and bake in the morning. Tonight is beer and burgers at the pub with hubby and toddler. Still trying to decide what to bring to the potluck on Sunday.
Celebrating the January Cure with out-of-town guest. On the menu this weekend: those delicious looking tacos with winter roasted veggies; a cassoulet with lamb sausage; and a thai slaw and sweet potato sandwiches - (love these sandwiches with hummus, avocado, pea shoots and a curry/fig dressing)

I will be hosting my first ever Super Bowl party this year so I have a lot planned for that, although nothing too complicated - 7 layer dip with homemade tortilla chips, fresh fruit salad, molasses cookies and grapefruit margaritas. Planning on also trying to make a batch of homemade bagels for the first time, can't wait!
I'm going out for dinner tonight (and hurray for local restaurants with amazing sandwiches and cocktails with homemade shrub syrups after a long week!), but I'm thinking about making these roasted kabocha dumplings tomorrow, and then using the rest of the squash in a pasta dish on Sunday. (Perhaps this one?)
Trying out some smoothie recipes this weeken. Probably a batch of Banana Bread and some chocolate chip cookies for my nephew who's going to be a big brother on Sunday. Also a lasagna and a chicken fajita casserole for my brother and sister in law so they have some food in the house when the new baby comes this weekend.
A loaf of bread to replace the one the dog ate today (I didn't know he could jump that high!), tomato and red pepper soup for dinner tomorrow, maybe pao de queijo with it...and who knows, maybe nothing on Sunday, I might just get bar food.
Jealous here. Dh's 3 wk business trip to corp ofc morphed into one.more.week at the last minute:( He'll be enjoying the culinary delights prepared by the 12 yr old son of the family who's adopted him on these trips (seriously, this kid is an amazing cook). Meanwhile...
I've decided to console myself with some rare & guilty [fast food] pleaures as I stuff the freezer with the already purchased fixin's for my planned Super Bowl fest. I'll have to work the fresh ingredients into next week's menu. Bleh. I'm starting Sat with a breakfast sandwich from a joint I won't dignify by naming and might even order a delivered pizza before the weekend's out. There won't be any hot spots in my kitchen this weekend...so sue me. (or invite me to dinner, lol)

Gonna roast some beef marrow bones and scoop it out and eat with with a little toast and parsley salad. Then I will take the bones and put it with some chicken thighs I scored at the co-op and make stock. I figure I can use the meat for various projects (risotto with chicken for sunday night maybe), and then soup for next week. I think I may just oven roast the skin for cracklings too.
Friday night, I used up leftovers and larder goodies: asparagus, pea, and parmesan frittata topped with smoked paprika slivered almonds, served with mashed potatoes and garlic bread.
Aaaaand that's as far as I've figured out the weekend. I supposed we'll have to have something for dinner tonight, huh?

Whole wheat pasta with roasted cabbage and roasted garlic. Black-bean-and-corn chili. A pan of brownies. Keeping it simple.
I'm feeling lazy and tired this weekend so nothing fussy: roasted potatoes and chicken thighs for dinner on Sunday and a chunky fruit cake and some mini frittatas with kale and bacon for lunches through the week.
Clean-out-the-fridge-soup. I found 2 big Fennel bulbs in there so I'm making a NYT recipe I just found - Fennel, Garlic and Potato soup. Smells pretty awesome right now.
I spent the day making a big batch of orange marmalade. The house smells great. Tomorrow I'm trying a dairy-free banana bread.
So, the "something" that I wasn't sure about? It ended up being an accidently (and deliciously) overcheesy penne & cheese, a big pot of homemade tomato soup, and an orange cake drizzled with orange syrup and ganache. Some days, only the jars of sauces and staples in the freezer keep us from ordering take-out.
Over this weekend I made three recipes that all had pomegranate seeds and pomegranate molasses in them! One was an appetizer, another a salad and third was a main dish. Can't wait to share ;)
