gazpacho! guacamole! anything with a fried egg!
I just made Gazpacho, it will be perfect for this warm weekend.
I just made a few veggie lasagnas (with sliced eggplant, homegrown tomato and zucchini, ricotta cheese, etc. I'm making one big one for tonight (since we have company) and the other two little ones are in the deep freezer.
A Mexican potluck feast...Brisket, Calabacitas con Elote (Zucchini with Corn), Chile con Queso, Fresh Salsas and Cervesa!
Ribs, slaw, baked beans and corn bread tonight and hamburgers on the grill tomorrow. Sunday we are having my in-laws over for brunch so I am making a sausage and mushroom strata along with a "California" caprese: tomatoes, red onion and avocado. Looking forward to lots of downtime and good eating over the next 3 days.
Anniversary dinner tomorrow night to celebrate my partner and my fourth - I haven't figured it all out yet, but we'll be having fried homemade pickles, perhaps a tomato risotto or gazpacho or carrot ginger soup, chocolate chunk and walnut cookies. Dessert was the specific request of my gf, the rest is based on her favorite foods.
just did a batch of peach ice cream!
I'm the one who wrote in awhile ago asking for help with what to make for the "Meet the Parents" dinner... This is the first round (with my partner's dad and his wife) and so I'll be doing an herb marinated grilled pork tenderloins, 101 Cookbook's zucchini gratin, a gorgeous caprese with our CSA tomatoes and already have black bottom cupcakes (via Smitten Kitchen via David Lebowitz) ready to go! Whew! Thanks again to the Kitchn readers who offered their great ideas!
I'm currently eating a bowl of the yellow rice I just made, and tomorrow we'll eat the leftovers with citrus-marinated grilled pork chops. Yum!
I just made pumpkin chocolate chip muffins with my daughter - they came out awesome! Tomorrow I think we are going to grill some fresh veggies and fruits from our local farmer's market. I also need to make some more bread.
this weekend is my birthday weekend which means we're celebrating with a labour day corn dog cook out! we're using a martha stewart recipe but with buttermilk batter. yum! and the first showing of a smore pie in our house! if i'm adventurous I might also make an ice cream cake!
I'm excited to try the Zucchini and Ricotta Galette from Smitten Kitchen.
@LauraJane, good luck with the "Meet the Parents" meal! Good luck with the parents, too!
It's feeling fallish where I live and I've started having a craving for fall foods but I spent yesterday canning strawberry jam. I didn't get to it in spring but a store had them on special for $1 this weekend so here I am with all these strawberries in September. They weren't perfect eating berries but they made lovely jam.
I need to make a birthday cake--probably the Guinness cake. And a birthday meal. Not sure about that. Maybe soba with tempura vegetables? The farmer's market pickings will determine that.
Moules marinieres real fast food. Enough left over for pasta dish too.
I just hit up my local farmers market and scored a beautiful big yellow summer squash, four ears of corn, two hot chilis, green beans, a pint of sungold tomatoes, a bunch of baby sweet potatoes, and some stanley plums. I just broiled the summer squash and combined it with gemeli pasta, halved sungolds, blanched green beans, fresh mozz, and some homemade pesto. I'll eat this pasta salad for bag lunches all week. The plums are, unfortunately, not very ripe, so I'm stewing them with some sugar, honey, a drop of balsamic vinegar, and half a cinnamon stick. I'll combine it with yogurt and granola for breakfasts this week. Other than that, I'm thinking I'll make a chili/lime/cilantro corn saute at some point. I guess most of my weekend cooking is devoted to making the coming week's eating much easier!
I've got a really laid back weekend planned, so I'm just taking each meal as it comes, but I will be doing a bit of baking. I'm going to try a jazzed up version of the "Ikea" cinnamon rolls, using whole wheat pizza dough from Whole Foods and the nut and raisin studded filling from Joy the Baker's amazing cream cheese cinnamon roll recipe. I may also test a couple of new cookie recipes for an upcoming breast cancer awareness bake sake my work is holding in a few weeks. The hard part will be deciding which of my gajillion bookmarked "need to try" recipes I should make.
Just returned from a week on the Devon coast (oodles of cream teas and freshly caught fish and chips, mmm). Miss the harbour view already...
Stocking the fridge back up and planning some healthy food for the week to make up for all the batter and clotted cream consumed last week!
Currently making tomato soup with all the toms that ripened while we were away, and making a batch each of lamb stock and chicken stock to clear out the overflowing freezer drawer.
On friday we made some steak tacos with a chile-lime-herb marinade and quick pickled onions! A great recipe to make indoors or on the grill. We'll probably make them again for labor day dinner!
