Good Friday evening! What are your cooking plans this weekend? We just saw the sun for the first time in days, and suddenly spring feels very close. We are dreaming about fresh greens, tiny peas, and all the other good things of early spring. Meanwhile, we are decluttering the kitchen, getting it ready for spring bounty, and planning a pasta casserole. What about you? What are you cooking this weekend?

It's not so much cooking as mixing. I am so tired of the cold and just the other day I was thinking of a pina colada...a real one, not some mix but a homemade from scratch one.
Leek and Romanesco Creamy Soup tonight with No Knead Bread, Masala Daal and Homeade Naan on Sunday!
Yummy!
Friends are coming for dinner on Saturday, and as it's still chilly here, I'm making posole. Starting the pork tonight.
For the Oscars, I thought I would pull out the grouse my dad brought me a while back and roast them, have a little cheese plate and something with chocolate for dessert. That seems appropriately decadent. :-)
Lentil and Sausage Soup from Bon Appetit a couple months back for dinner tonight
Chocolate Cupcakes with Peanut Butter Frosting from Barefoot Contessa At Home for book club tomorrow
Onion, Bacon and Potato Tart from Mark Peel New Classic Family Dinners for Sunday
If I get around to it, Corn Muffins from Barefoot Contessa as well.
Unusual for me, I actually have a planned menu for dinner tonight! Casserole with chicken, noodles, broccoli, sliced mushrooms, and spinach artichoke parmesan dip that needs to be used up!
I too, am making a pasta casserole. I just put this Three-Cheese Parsley Pesto and Shrimp little number into the oven in honor of Lent.
http://www.gastronomersguide.com/2009/11/baked-three-cheese-pasta-with-parsley.html
I have 3/4 of a cup of parsley pesto left over. Suggestions for later useage?
I just made madeleines, in a mini-muffin pan (as I don't have a madeleine pan) and with orange zest (rather than lemon). I got the recipe at the event I worked last Saturday, and just couldn't resist after today's post. They were surprisingly quick and easy, even if I did throw flour everywhere courtesy of the mixer.
Dinner tonight is going to be ribs, from a local restaurant, because the guy's ribs are amazing even without their tasty sauce.
I am also pondering making sloppy joes, but I have a bit too much in the way of leftovers to really be cooking. Big batch of those Greek-style baked beans linked here previously (meh), stuffed leg of lamb made in class... I really need to be clearing out the fridge.
Making three bean turkey chili tomorrow and repurposing it as chili cheese fries on oscar night, perhaps with guacamole and some kind of cocktail.
I challenged myself this month to only eat meals at home. So when I started craving BBQ I had to go in search of recipes so I didn't feel tempted to break down and eat out.
I am trying this recipe tonight: http://allrecipes.com/Recipe/Slow-Cooker-Pulled-Pork/Detail.aspx
The pork is already done and it seemed to work okay. Though the pork have a slight root beer tang when I took it out, once I added the BBQ sauce you couldn't taste the root beer more.
Also thinking about making a lemon curd tart in order to use the jar of lemon curd I have wasting away in the fridge.
i made pumpkin scones this morning for the first time from scratch. fluffy and delicious!
Lemon something - cake or maybe lemon without-the-meringue pie... and something for Oscar night - lasagna if ambitious!
Braised chicken with shallots (Everyday Food mag) and clams casino.
We're having 20 people over for lunch on Sunday (nothing Oscar-related), and are planning to make a few lasagnas, several vegetable dishes, and two citrus cakes.
I made Baked Polenta with Wild Mushroom Sauce for dinner tonight. Delicious! The recipes are from the Contra Costa Times: http://www.contracostatimes.com/search/ci_14434769?IADID=Search-www.contracostatimes.com-www.contracostatimes.com&nclick_check=1 and http://www.contracostatimes.com/search/ci_14434780
This weekend I'm planning ahead and mixing up loads of pie dough for next weekend's Pi(e) party (next Sunday - 3.14!!).
To enjoy now, either madelines or biscotti - I'm undecided. And probably pancakes either later this morning or tomorrow.
A couple of weekends ago I had the most delicious scone of my life (ham & cheese) at Alice's Teacup on E. 81 st. in NYC. So this weekend I think I'm going to try to replicate it. I am not a huge scone fan and never make them but this was a game-changer.
Also a braise of a large piece of pork from the farm CSA I belong to, with onions, green peppers, red wine & garlic.
And a big pot of soup for next week's lunches. Haven't decided what yet--need to read all the comments to see if anyone has any ideas. I have some beets I need to use; maybe it's time for borscht.
Friday night made Food and Wine's Pasta with Sausage, Basil and Mustard for a group of 5 plus roasted balsamic turnips and broccoli. Plans to bake Chewy Ginger Cookies with Black Pepper and Cardamom today from Pithy and Cleaver (http://www.pithyandcleaver.com/?p=1709).
Last night I made Italian Wedding Soup... http://smittenkitchen.com/2008/02/escarole-and-orzo-soup-with-meatballs/
and Hummingbird Muffins from a recipe in the food section of the paper.
Both were really good!
poached eggs on toast (taking another shot at the eggs...they never turn out!)
and later in the weekend, chocolate layer cake.
Our weekend guest will be treating us to a vegan spin on beef stew!
It's Oscar weekend so definitely something special - I picked up a chuck roast at the Farmer's Market this morning so I'm thinking about throwing it the crock pot tomorrow morning with some onions, garlic and shallots. Carve and make sandwiches with Yards ESA whole grain bread from a local bakery!
I'm stocking up my boyfriend's freezer before I leave (we're long-distance):
-Ham and Pea Soup
-Spicy Green Lentil & Italian Sausage Stew
-Stuffed Polenta with Italian Sausage, Tomatoes and Mozzarella Cheese
-Roasted Garlic & Corn Couscous
-Chickpea Quinoa Burgers
-Spiced Red Potato Wedges
-Bean, Potato & Cheese Casserole
-Spicy Bean Burrito mix
Yeah, it's a lot, but they're all easy dishesto put together and I know it's well-appreciated.
I'm working again this weekend - sense a theme here? - but I'm hoping to make it out of here before 8pm so the plan is to try Ina Garten's roasted shrimp and orzo recipe tonight. I'm thinking of replacing the orzo with quinoa.
There's also been some nice looking citrus in the stores so I might go totally Garten and make a lemon yogurt cake.
@nicole u: If your problem is that your egg whites don't stay together, try this. Crack the egg into a big metal ladle, and set this in the water. When you see the white around the edges becoming opaque, quickly dump the egg and let it cook. It should all stay together this way.
As soon as I recover from my first-of-the-year gardening, I am gonna give a beer can chicken a try. CI has a recipe that I figure to give a whirl. And if my energy really comes back, I will look into the mushroom soup the Kitchn had featured once. Absolutely beautiful El Nino weather this weekend in Seattle...March is coming in like a lamb...
A pork shoulder is braising in some white wine and herbes de provence as we speak. Along with that we'll have some roasted veggies and ww couscous w/almonds and parsley. Desert in Ina's lemon yogurt pound cake.
I just had quasi-homemade pizza for dinner! I used pizza dough from trader joe's, half pesto, half red sauce and topped with mozzarella & parmesan cheese.
For tonight:
- a crustless quiche with spinach and caramelized onions, roasted red potatoes and carrots, probably a bean or pasta salad.
And I'm cooking today for Sunday and Monday, too. I'm bringing a cinnamon streusel coffee cake to a baby shower Sunday morning, and Sunday night we're having finger foods so The Fella and his writing partner can live-blog the Oscars. The menu:
- caramel corn
- spinach & caramelized onion quiche (with crust this time! Little quiche, little slices so they can pick 'em up by hand)
- red pepper hummus with crudités and crackers
- hot dip of chevre, tapenade, tomato, and herb oil with crackers
- and I can't remember what all.
Earlier, I made and froze pulled pork and sesame rolls --- a dinner care package for some new parents. I also made sesame-flaxseed crackers, but I dropped the whole batch after cooling and had to throw them out. Wah. And there's a batch of French bread rising right now.
Phew. I am tuckered out.
It's finally feeling like spring - I'm planning on eating LOTS of veggies - roasted cauliflower, asparagus, sweet potatoes, red onion, zucchini. Some crusty home made bread. Peach iced tea.
YUM!
http://www.seejencook.blogspot.com
Ha! I made it home early enough to cook. The roasted shrimp and orzo (actually quinoa) salad was good. Too much feta and it needed more crunchy veggies.
Happiness is having leftovers for lunch tomorrow at work.
Pho! Have been making a lot lately. Perhaps it is the hard winter and the [still!!] patches of snow outside. Pho the antidote to snow. Or as my Louisiana relative calls it 'sneaux'.
Of course to make pho and snow rhyme... pho and snah...
@oncahuenga... check out this blog: http://noteatingoutinny.com/
this woman challenged herself to not eat out for a year.
everyone is making such yummy things this weekend... all this cooking inspiration!
I've cooked/am cooking:
- homemade pizza with anchovies (friday night)
- cauliflower ragu (traditional sicilian sauce of onions, anchovies, tomato paste, steamed cauliflower, pine nuts and rasins - YUM) can be served over ww pasta or as a side.
- scrambled eggs wth sauted onions, zucchini and mozzerella cheese
don't know what i'm going to make tonight but i've got some great produce in the fridge waiting for me to use up.
we drooled over the first of the outdoor furnishing displays at tar-jhay yesterday...
made tuna steaks auruduci for dinner last night, might try sweet potato pancakes for the oscars tonight...?
Tortilla soup and pistachio pavlovas with lemon curd and poached kumquats.
I'm making a custom chocolate chip cookie cake, a dozen shamrock sugar cookies, and some Baileys truffles!
http://mccaffreysbaking.com
I tried fiddlehead ferns for the first time, as a way to think springier thoughts! They are spendy but you only need a handful to make this pasta with garlic, shallots, white wine, mushrooms, and bacon!
http://theweekendgourmande.wordpress.com/2010/03/07/kitchen-firsts-fiddlehead-ferns-with-linguine/
Homemade pizza with sausage and onion confit on Saturday, and red beans & rice with the rest of the sausage on Sunday.
I cooked for a supper club this weekend so this was what was on the menu:
papri chaat - http://abcdsofcooking.blogspot.com/2010/01/papri-chaat.html
sambar - http://abcdsofcooking.blogspot.com/2009/12/sambar-south-indian-lentil-stew.html
