It's nearly May, and the sunshine is bright! We are just finishing our month of 3 Square Meals (and Dessert); we covered breakfast, lunch, dinner and sweets. I made a big pot of Ratatoiulle, and I think I'll make a batch of lime sherbet.
First, thanks to all the suggestions on encouraging my family to try new recipes last week. The dinner I hosted was a great success and everyone loved all the great new dishes. Not to mention, the salmon I was so nervous about turned out moist and tasty.
Tonight, I went for a jog to clear my mind after a long week and then comforted myself a bit more with pasta carbonara. We'll see what the rest of the weekend brings, but lavender shortbread has been on my list for a while, it's probably time to bake some :)
Dinner tonight was roasted asparagus, spring risotto cakes, a few hard boiled eggs. There's currently a bourbon chocolate sherbet whirling in the ice cream maker! Tomorrow is out to dinner and Sunday I've got book club, so I've got to figure out something easy to bring along. Any thoughts?
I just made some rhubarb compott, later I will add strawberries to the mix and serve it with pancakes and lattes for breakfast.
After making scones and a 3 course meal to celebrate the royal wedding (salmon blinis, roast chicken and potato dauphinoise, then queen of puddings) I am making fried rice on Saturday and tacos on Sunday. Easy food,
I'm going to try making General Tso's Chicken in the Crockpot (http://crockpot365.blogspot.com/) today. The honey asked for Shepherd's Pie for tomorrow, and I'll probably accompany that with some garlic bread. One thing's for sure: anything I make is going to have PLENTY of asparagus in it, because I got a ton of it from the CSA this week and more is coming on Tuesday.
Tonight is lemon risotto, tomorrow is an asparagus goat cheese frittata and a red lentil soup. I'm going to try yet another healthier blueberry muffin recipe (I've yet to find one we love). The fridge is clogged with odds and ends. There will be some tossing out and some devising of lunches from what I find.
This weekend is all about using up what we have: the homemade Pad Thai in the fridge, waffles and strawberries from the freezer, pasta from the pantry as well as other odds and ends. Trying to save money and waste less means no new exciting recipes this weekend!
I'm attempting to empty out my fridge and cabinets in the next few weeks. I keep bringing more food into the house when I already have a ton. Making pulled barbequed chinken in the slow-cooker to use up some chicken. Roasted potatoes and carrots are also on the menu.
Beef & Black bean burritos for next week's lunch. Marble loaf cake for baking group, Laurie Colwin's fake tandoori chicken, and PW's meatloaf for dinners for this week.
going to a BBQ (first of the season!) tonight and I just put those fabulous-looking Halfway Cookies in the oven.
Reuben sandwiches made with grilled portobello mushrooms and a quick green salad was dinner tonight; tomorrow I'll make a lemon curd tart to bring for dessert with some friends.
And I may make Jeffrey Alford and Naomi Duguid's fabulous coconut banana bread tonight... we'll see.
This weekend I've been making my own bite size sausage rolls and mini white chocolate and raspberry scones. Remarkably easy and fun to make!
And seeing as Sunday is Farmer's Market day, I'm going to make something amazing from Yotam Ottolenghi's scrumptious "Plenty".
Bless the hubby, he grilled chicken with the burgers yesterday. Today, I start clearing out and washing the lettuce and made a honey mustard dressing. So it's a Sunday salad with sliced chicken breast and homemade dressing.
Red beans and rice for Monday. I'm craving pasta and that will go on the menu this week.
Finished up the weekend w/ pizza dough (decided I'm having pie for dinner tonight and tomorrow!) and Door Sixteen's veggie chili for lunches this week. Should be good to get me through the last week of classes before finals.
