Breakfast Week is drawing to a close, and we have scones and waffles on the brain! We're looking forward to a weekend of great brunch and breakfast. What about you? What are you planning on cooking this weekend?

I made a layered tortilla casserole with chickpeas and broccoli.
Something involving asparagus, and something else involving the first rhubarb of the season!
i just made hummus and some coconut protein balls. i haven't cooked in weeks so i feel very accomplished.
Pesto to use up all of my basil. An Oyster Mushroom dish . . . thinking about making it like a scampi with a little butter, garlic, white wine and lemon.
Just made some blueberry muffins for brunch, and we're going to celebrate a warm-ish sunny day with a fresh tank for our barbeque and tacos with either grilled fish or grilled steak.

Had some friends over for dinner and served
- baked potato bar! Lots of crispy-skinned, tender russets, and topping for each guest to add: garlic mushrooms, caramelized onions, pan-seared broccoli, Parmesan, bacon, sour cream.
- creamed spinach
- beer bread
For dessert, a guest brought a box of lovely chocolates from the posh local shop. So lovely!
One friend crashed on the couch, so I made cinnamon streusel coffee cake last night, to have with a lazy cappuccino this morning.
With all the goodies left over from the potato bar (except for the creamed spinach --- they scraped the bowl clean!), I'll be making an omelet or frittata tonight.
I'm also going to start prepping soft foods for my upcoming oral surgery recovery period: mashed potatoes, yogurt cheese, refried beans.
Yogurt-marinated rack of lamb, crusted in garam masala and roasted. With lentils.
The weather is glorious here in London this weekend. Lunch, corned beef sandwiches in the garden. Tonight, fish tacos (adobo-lime marinated pollock) with red cabbage slaw and crema. Tomorrow, breaking out the Weber for herby lamb shoulder, (sesame carrot burgers for veggie friend) and citrusy chickpea salad. Oh, and mint juleps - it's supposed to be even warmer tomorrow :)
I have a good looking heirloom tomato, Boston Lettuce, Eggs, bacon from my butcher, and good bread. So I planning a Sandwich ala Spanglish style. But I never made anything other than scrambled eggs or a omelet. I never made a fried egg or anything and I never ate a runny egg yolk before but I am suddenly craving it but im afraid I won't like it.
Oh and I just made purple meringue cookies and I am planning to make a big batch of meat balls for meat ball subs and then freeze the rest for spaghetti and meatballs later this week.
I plan to make a dish called "Chicken Riggies"-a dish that hails from Utica, NY. I need to get some eggs going for hard boiled eggs (part of breakfast for the week.) And tonight it's crunchy pork chops with Pioneer Woman's potato pockets and roasted carrots.
Made Faith's chickpea, lemon, herb and shallot casserole last night and as I was prepping got a call from a good friend down the street. Impromptu little dinner party while we enjoyed a bottle of white wine and sat in front of the windows while an amazing spring breeze blew in. And now we've both got lunch for tomorrow! :)
Tofu pot pie and oatmeal raisin cookies with a trial of cutting the fat way down in the recipe.
Last night was take out manicotti from the best Italian restaurants in town. Yum.
I'm always really wanting some cabbage dinner and mango/lime homemade sorbet.
This weekend I made an 'ode to spring' dinner. It included homemade linguini tossed with chrevre and lemons, roasted asparagus, and a spinach and strawberry salad. Delicious!
Today was a bit decadent - some challah french toast, a latte, and some strawberries. Tonight I'm making a spinach and asparagus frittata.
It suddenly feels like spring here, so yesterday I made potato salad and started some steaks and chicken breasts marinating. Also tried two new recipes, one for Oat Bars (I thought they were so-so, but the member of the household that needs the health benefits of them scarfed them right up) and one for Texas Caviar--a black-eyed pea salad. This morning we had our usual Sunday bacon-egg-hash-browns-toast extravaganza and dinner will be garlic bread, BBQ chicken and steak, and the salads. Maybe the asparagus, too. Then we should have plenty of leftovers for lunches during the week.
Later this week, I'm going to experiment with making breakfast burritos and freezing them.
Pizza and a big salad last night. I also tested out the Mad Hungry Banana Cake. It isn't quite what I was expecting. The BF said it looked like a big brain, all lumpy and craterey. But hey, it's cake. A weird cake is better than no cake. Next time I'll just make banana bread.
Tonight we are having a ham and cheese breakfast casserole, a big salad, and some fresh pineapple.

Made a potato and carrot gratin off the top of my head. It's amazing how easy extemporaneous cooking has gotten since I read "Ratio"!
Biggest brunch ever! Eggs, scones, smoked salmon, fruit salad, turkey bacon, creamy potatoes, sauted mushroooms and peppers, french toast, french bread, cheese, strawberry smoothies, coffee...
Focaccia Farcita ve Hummingbird Bakery chocolate cake were in my baking menu this weekend. Both were wonderful!
I had big plans, but all I made were homemade pizza and enchiladas. Spent most of my time gardening and napping.
