This week we toured the New York kitchen of Ed Cotton, Executive Chef at New York's Sotto 13 and a Top Chef alum. We saw how he uses his oven and noted a particularly cool feature on his range. We discovered his favorite knife and a few easy ways to work clean (the chef's mantra!).

What are you cooking this weekend?
This weekend I will be cooking steak tacos. Super simple and tasty!
What inspired what you're cooking?
I get inspiration from walking the streets of New York. We have so many street vendors and taco trucks all over the city. I also really love the fresh flavors in traditional Mexican cooking, like mole. Mexican cooking tends to have bright, big, and bold flavors. These little tacos are a great snack, lunch, or dinner dish. I love making tacos for our staff meal at the restaurant!
What is your favorite time to cook at home?
If I'm off on Sunday I will tend to make a one-pot dish like chili or a stew. In the warmer months I do a lot of grilling on our rooftop — burgers, dogs, steaks, lots of veggies.
Is there an ingredient wildly inspiring to you right now?
I love Middle Eastern spices. Za'atar is a favorite of mine.
What do you love about cooking dinner in your home versus in a restaurant?
I enjoy the comfort of cooking at home. I don't have to please anyone other than me and my girlfriend.
What do you wish someone else would cook for you this weekend?
Roasted prime rib with horseradish cream and a popover. Classic and good.
