I just picked up a bag of these mini cinnamon baking chips. They're just like chocolate chips, except they taste like cinnamon instead of cocoa. They're tiny, creamy, and sweetly spicy. I am trying to decide what to do with them — what would you bake with these little morsels?
I'm pondering chewy oatmeal cookies with pecans, and rolled yeast bread with pockets of cinnamon. Or perhaps something more creative? Brown butter bars with a cinnamon syrup and these melted on top? Or just a batch of pancakes?
What do you think? What would you do with these?

Those are fun! I'm on board with the oatmeal cookies. I think I'd do hazelnuts instead of pecans, though. Let us know what you make!
Did you find them in a store? If so, can you PLEASE share where you found them? None of the chain stores around me (in Boston, MA) carry them, though supposedly they do in the South. I feel silly paying shipping fees for an $8 item if I try to order them online...

CINNAMON CHIP SCONES with butter is one of the best things ever. Definitely try that! !
I wonder if you could melt them and use it to make cinnamon swirl ice cream. I bet it would be a good addition to cereal milk ice cream (http://bit.ly/hGziH4).

During the holidays Hershey's sells them as well for a lot cheaper. Great to buy in bulk and freeze to enjoy year round!
Septicidal, I bought cinnamon chips once upon a time at the stop and shop at the end of the E line. I'd call them before you go all the way out there though.
I have a recipe from an out of print (i think) book titled dessert for chocolate mousse made with just eggs and chocolate chips (its delicious, easy, and sets quickly). I used to sub in some cinnamon chips for something amaaaaaazing. So try subbing them in partially for anything that calls for chocolate chips :) But especially try making a cinnamon chocolate mousse.

I was at a party where someone put cinnamon chips in a rich chocolate bundt cake, and it was AMAZING.
I have some as well and don't know what to do with them. I found mine at a close out discount grocery store. I got hersheys brand ones. I'm thinking banana bread, or oatmeal cookies!

Cinnamon chip muffins warm out of the oven sound pretty good.
I'd melt them for a cinnamon/chocolate icing, or put them in spicy brownies.
I'd throw a handful into rice pudding or bread pudding right before it's served - when there's enough residual heat to make the chips gooey, but not melt & disappear entirely. Yum!
Also, I bet they'd be good melted and drizzled over the cream cheese frosting on carrot cake or a cooled cheesecake.
Apple slices & peanut butter ... studded with cinnamon chips! Yum.

Cinnamon chips are super in banana bread (we like to mix in chopped dates, too).
King Arthur's website + blog are a treasure trove of baking ideas, too.
Had them in a homemade challah a few weeks ago. Made great toast. Only imagined what french toast or bread pudding would have been like.

@septicidal - I've seen cinnamon chips at many chain supermarkets in the Boston area. Hershey's is one brand. You can probably also find cinnamon chips at Whole Foods or Trader Joes.

I love the scone idea. You could add these to anything with a streusal or crumb-type topping. Just sprinkle them on.
How about a pumpkin bread or something similar with them?

A second vote here for using them in chocolate cookies. That way there's a "Mexican hot chocolate" element.
Hershey's has a recipe for an oatmeal bar that uses cinnamon chips (the actually recipe is for a cookie. The bar is a varient).
I make them for Christmas, and let me tell you, they're the first to go, and the most fought after cookie on the plate.

They are amazing in cinnamon chip oatmeal raisin cookies, make sure you use golden raisins.

I add them into my cinnamon roll filling. Butter, cinnamon, brown sugar, cinnamon chips, walnutsor pecans and toffee pieces. I'm not claiming they're close to healthy, but they're so so good!

We searched all over for these over the holidays to use in a cupcake recipe...more specifically...cinnamon cream cheese frosting. I would have put that frosting on everything I ate it was so good...
I get mine from preparedpantry.com. I just buy them a few bags at a time, and it totally justifies the shipping-usually I get enough to meet the free shipping limit. I use them in Waffles and Pancakes-just throw them in the batter. I've thrown them into bundt cakes too. I wouldn't touch the Hershey's brand...

I just saw these yesterday at country mart in potosi, mo and I wondered to myself what in the world would I do with these?
take cresant rolls from the store unroll them and spinkle the cinnamon chips on them - then roll and bake as normal. It makes a great treat for the kids as they head out the door and is quick and easy. My kids have 2 favorites they always ask for - they love the cinnamon ones but if I can't find the chips at the store their runner up version is the peanut butter and chocolate chips
