Spinach, onions, peppers, mushrooms, broccoli, tomatoes, asparagus! I usually saute the veggies in a pan with a little olive oil and garlic and then add eggs and scramble. Sometimes adding cheese like mozzarella or american and breakfast meat. So good! I bet hash browns made from sweet potatoes would be good too.
Omelets and fritattas are good places for vegetables. How about gazpacho for summer breakfast? Fried tomatoes? Peppers stuffed with eggs, chees and a litlle rice, bulghur or quinoa. Eggs on a bed of kale. Spinach quiche. Breakfast pizza with onions, olives, mushrooms, broccoli, greens, fresh tomatoes...
I like to put a poached egg on top of any of the following and call it breakfast:
-a pile of wilted greens (usually spinach or kale)
-steamed asparagus tossed with a bit of mustardy vinaigrette (or hollandaise if it's the weekend and I'm feeling indulgent)
-a pan of sliced mushrooms cooked with bacon - they get caramelized and bacony and it's just perfect. A bit of fresh thyme in the pan is fantastic, too.
-A hash of sweet potatoes, bell peppers and spinach or kale.
-An arugula salad with lots of cracked pepper.
Of course you can use any of those veggies (and lots of others, too!) in an omelette or fritatta, but I like my eggs best with a runny yolk that acts as a delicious sauce for the veggies in my breakfast. And naturally these are all better with bacon.
Onions (red, white, green), mushrooms, peppers and spinach are standard to add to eggs in the morning. Same can be added to breakfast burritos and then you can put some salsa in there too (fresh or store-bought).
I keep pre-roasted veggies (carrots, broccoli, peppers etc) diced small in the fridge, as well as pre-cooked turkey bacon. My morning routine:
1. scoop some veggies into the bottom of a bowl, microwave for 30sec
2. add an egg to the bowl, scramble it and microwave 1min
3. place on a sandwich thin w. 1 slice of bacon (cut in half) and EAT!
I'm out the door in no time, and I've got a delicious & nutritious breakfast.
The posters above pretty much covered them all: mushrooms, greens, peppers, corn-even broccoli works great. Don't discount salsa being counted as a serving of vegetables too!
While technically a fruit, avocados are my staple breakfast veggie (yes, I know, fruit. haha). Half an avocado, a poached egg, and some grilled tomato slices. I'm good to go.
Not sure if it's technically a fruit or a veggie, but how about some avocado? With a bit of olive oil and lemon juice, or in a smoothie, sliced/mashed on a sandwich, as a fried egg avocado, etc. Yummy!
One of my breakfast favorites came from a room service breakfast order: sautéed fresh green beans with sea salt and fresh pepper. I usually serve it next to eggs.
I second the something green under a poached egg approach. I also really like orange foods at breakfast (sweet potatoes, butternut squash etc). Peel cube and roast a big bunch in some cumin, garlic, salt, pepper, and olive oil - then toss with greens and beans for breakfast!
This is exactly what I do too!
Don't forget about smoothie-friendly veggies: fennel, kale, spinach, beets, carrots, pumpkin, sweet potatoes, and even parsnips.
My routine is (scarily) similar to @contropercial Wilted greens are my go to veggie just because it take so little time and it's a great way to use up greens that are on the cusp without feeling like you are eating greens that are about to go bad. In the summer I add sliced tomato to my routine.
Seconding the salsa, it's so delicious on eggs! All the above are great and I also love to keep a couple of squash around depending on season - a quick saute in a pan before throwing in my eggs adds some extra vegetable goodness.
I can't generally find time to cook veggies at breakfast, but I keep leftovers from dinner and often eat them at breakfast. Raw veggies I like are radish slices (on a buttered baguette), avocado of course, and in the summer, greens. I'm not a huge fan of a cool salad for breakfast when it's cold outside. This time of year, I'm more likely to be eating leftover sauteed rabe or chard, reheated.
I love a savory breakfast! My recent favorite is a black bean salad, cribbed years ago from Dr Weil's Healthy Kitchen and modified greatly since. I serve it as a bed for poached or fried eggs. Very easy:
--1 can black beans
--1 small can pineapple tidbits
--red onion (1/4 to 1/2)
--ground cumin to taste
--1/4 c olive oil
--splash of lemon juice
--ground red pepper (cayenne) to taste
--1/4 to 1/2 red bell pepper
Toss together in a bowl. Best made the night before, and can be modified to fit your mood and cravings. Especially delicious with finely diced tomatoes and 1 cup cooked wheat berries or barley.
a happiness bowl: quinoa topped with scrambled eggs or black beans, aged cheddar and lots of homemade salsa (tomatoes, cucumber, capsicums, lime juice)
scrambled tofu made with firm silken tofu and any diced veggies I have in the fridge. Particularly good with shiitakes.
Not (technicially) a veggie, I've grown fond of the British fried tomatoes with breakfast.
If we roast and season sweet potatoes or red peppers for dinner we keep the leftovers on hand for the morning eggs. Delish. Also for fruit we pan fry sliced peaches. Great for a sweet element. If you're going healthy, I recommend eggs from chickens fed a diet of grass, kale, cabbage and other good stuff. Our mechanic of all people gave us some from his farm; the taste is a thousand times better and lower cholesterol.
Oooh breakfast is my favorite!! I would eat it every meal if I could but my husband says nay. :(
Some of my favorites..
Fry up tomatoes and eggs and breakfast meats in the same pan, British style.
Serve breakfast top of a bed of wilted baby greens / spinach / arugula (microwave for half a min to wilt). If you add cherry tomatoes as well, this will cook them almost to bursting, and they will soften and taste sweeter, and the juice makes a lovely breakfast salad dressing on its own or together with runny yolk. Can't beat the egg + tomato combination!
Make frittattas or egg muffins in bulk from whatever veggies on hand and freeze, then microwave for 20 secs to heat up in the morning.
Have some black beans and salsa, scramble some eggs, saute some diced up breakfast meat, and call it Mexican. Naked breakfast burrito!

Every morning after I fry an egg, I toss a large handful of arugula in the pan and saute it until it is wilted. I like arugula better than spinach because it has less liquid, so it doesn't come out of the pan watery.
I cook cut up asparagus in the skillet, and once its mostly cooked, I pour the beaten egg(s) over top. It frequently comes out as a mix between scrambled eggs and omelet. Sometimes I mix Dijon mustard into the egg, or add a little cheese. I usually have it with a piece of toasted naan.
My fav thing is to take last night's leftovers and turn it into breakfast with the addition of eggs, grits/oatmeal, maybe some canned sardines, fresh herbs...you get the idea. I usually cook a little more veggies than needed for dinner so that I can have a quick, yummy breakfast in my future.
My favorites are onions, garlic, frozen peas, carrots and potatoes. I love tomatoes, although, that's not a veggie. If I have breakfast with my mom, she'll serve corn (sometimes on the cob, sometimes not), sweet potatoes and some green leafy vegetable (usually spinach).
Truth to be told, I usually just use whatever vegetable is in my fridge/pantry and I usually add them to my omelets.

Whatever's left over from dinner the evening before. Just toss in the egg for a scramble or add the veggies to the eggs for an omelet. Add your breakfast meat to the mix or serve on the side, whatever suits your fancy. Personally, I find tomatoes always brighten up the mix.

I keep carrots and red peppers for breakfast--just slice them up and eat them raw. Usually I'll have a few thin rye crackers with cheese to go with them. I love having a healthy breakfast, but I also love sleep, so raw veggies are the way to go for me.
I love fresh arugula tossed with some squeezed lemon, salt and pepper with a fried egg on top, with or without some sliced avocado; perfection. If I'm felling naughty I'll have a local toasted bagel with a bit of cream cheese, mashed avocado, s&p, sliced tomato and sprouts.
In the morning i like to use fresh cherry/grape tomatoes, asparagus and either spinach or arugula. I like to sauté them with tequila (or a nice whiskey), chicken/vegetable stock, garlic (1-2 cloves), a touch of soy sauce and salt/pepper to taste. The tequila/whiskey is great to cook these vegetables in especially on a fall/winter day since they have a warm taste and really bring great flavor for a small side of veggies in the morning. I like to top it off (when they're still hot) with asiago cheese.
