Q: I picked up some super yummy-looking enoki mushrooms at the farmers market, but all the recipes I've found are for noodle soup. Does anybody have any interesting recipes/ideas for enoki that aren't soup based? Thanks!

Editor: Enoki mushrooms always seem to reach out to me at the Asian market, and I often pick up a pack without knowing what I plan to do with them. Turns out these tender mushrooms are pretty versatile. Aside from soup, they're delicious sautéed with a bit of garlic and a splash of soy sauce. I'll make a little extra of that mixture and tuck it into an omelet.
Enoki mushrooms have a very faint fruity flavor, which is most readily enjoyed when they're eaten uncooked. Toss a few into your next salad and see if you can detect it.
Kitchn readers, any enoki fans out there? What do you do with these mushrooms outside of adding them to soup?
