What Is the Best Way to Cook Stone-Ground Yellow Grits?

Q: I just picked up a two-pound bag of locally stone-ground yellow grits at the farmer's market and I don't know how to cook them.

I can find plenty of recipes for specific grits-based dishes, but I can't find any basic way of cooking them that I can adapt and riff on?
