Q: Last summer I made a ton of green enchilada sauce for my freezer. Turns out, I don't make enchiladas that often. I'm making an effort to clear out my freezer for this summer's bounty. What else can I do with green enchilada sauce besides enchiladas?

Editor: Megan, I like using leftover sauce like this for cooking pulled pork or chicken. Just dump it over the meat in a slow cooker and cook on low all day, or until the meat is tender and can be shredded.

Chilaquiles!
Use as a base for a green chicken or pork chili, you've got so much flavor already you're halfway there.
And, naturally, use as a condiment, especially for your own spin on huevos rancheros or a breakfast burrito
i think there is a name for this, but just heat the sauce in a small frying pan, and drop eggs in it! yummy.
or add it to guacamole or meat for tacos?
Maybe a Mexican/Southwest version of shashuka:
-Take green enchilada sauce and put into a medium skillet or sauce pan.
-Crack a few eggs and slide on top of the sauce
-Cover and very gently simmer until the whites set up.
-Top with a little (or a lot) of shredded Monterey Jack and some crumbled Cotija or feta.
Serve with warm tortillas or flat bread.

How thick is it? Could you use it generally as a dip with chips? Or have a fondue night with it?
I third the chilaquiles...first thing that popped into my mind. I wonder how it would work as a sauce for a warm potato salad too.
I like to make a creamy soup with homemade green enchilada sauce as the base. Mix with broth, cream, and chicken/veggies.
Stratas, or similar layered casseroles. Especially nice for brunch. I generally use tortillas instead of bread, and double the sauce and protein&veg layers while reducing the strata layer.

I would use the sauce in the crockpot and mix it with chicken (or other protein) to make a great filling for burritos.
Oh, easy! Slow cook any meat you like in it. Chicken, pork, beef, whatever.
