Q: I have a half empty carton of eggnog in my fridge and, while I know it will keep for awhile, no desire to drink it.
Are there any creative uses for eggnog other than French toast? Could I use it in scones?

Editor: If you aren't averse to drinking it in another form, you could make lattes with it:
You could also substitute it for milk or half and half in a pudding or custard recipe.

Eggnog fudge or truffles? I usually use the leftovers in pound cake, scones, muffins, cookies, pancakes or the aforementioned french toast. Any of my standard recipes using buttermilk, during the holidays, I sub eggnog just to use up the leftovers.
I'm going to try making ice cream out of mine.
I've tried a pancake recipe variation where I subbed eggnog for both the eggs and milk in the recipe (and then fried them in butter kind of by accident). Those were quite good.
I second the cake idea. People love it and it makes a great holiday gift! I just substitute milk in any cake recipe.
Anything baked, just switch out the liquid for eggnog. It's great. Cake? Use eggnog in place of milk/water. You won't get a strong eggnog flavor, just make the baked good more moist and dense.

Make rice pudding. Or as a shortcut, I added some to Kozy Shack rice puddingt this weekend

More seriously, DON'T use it as a milk substitute in instant pudding. It's terrible. It seemed like a good idea at about 3 AM once, but trust me, it's not.

Bread or rice pudding would be amazing! Maybe creme brulee or as others have said, panna cotta?
These eggnog scones are always a big hit at our house and as gifts. Don't be put off by the inclusion of cornmeal--it adds a nice "bite."
