Q: I was so excited to see that Trader Joe's carried white chocolate chips without hydrogenated oil that I bought 3 bags — but now I realize I should probably use them up before they go bad. What can I make besides cookies, white chocolate drizzle, or white chocolate buttercream?

You can basically substitute it for chocolate chips in most recipes, though I would reduce the amount of sugar in the recipe since the chocolate is so sweet.

The white chocolate chips make the hot cocoa very rich and creamy.

What can't you make with white chocolate chips?
You can make little fruit/nut clusters with white chocolate and dried cherries or cranberries.
I also like to add some to my lime/lemon curd (just stir it in while it's still hot) for a subtle flavor and extra richness.
Chocolate bark made with white chocolate, pretzel sticks, dried cranberries, and macadamia nuts is festive, beautiful, and the taste is really more than the sum of ingredients.
Coat raw cranberries with melted white chocolate--the tartness of the raw berries cuts the uber-sweetness of the chocolate. Even I, as a non-white-chocolate-fan, like them like this.

Just fyi, chocolate doesn't really go bad. Maybe if you've put it in a super gross humid place, but still. So if you get tired of eating white chocolate, there's no reason to hurry to use it. But it's good to know that Trader Joe's has white chocolate in chip form. I usually have trouble finding white chocolate in stores.

I recently made a white chocolate cake roll with cranberry mousse filling, and it was insanely delicious. I'm sure you could make the same cake with any holiday-themed filling and it would be delicious (though even as someone who isn't a fan of cranberry the filling was unspeakably tasty, so I recommend trying it).
Make peppermint ice cream and then swirl in melted which chocolate. I use just a regular vanilla ice cream as a base. Add a few tsp of peppermint extract and about 6 ground up (very fine) candy canes. Freeze according to your maker's directions. Then pour into a big container that you'll put in your freezer for 24 hours but before sealing it up and freezing it, drizzle in "laces" of the melted which chocolate. Sir and add add as much melted white chocolate as seems delicious (a lot!). Makes for a mysterious crunch when your guests eat it. A big hit at our house over the holidays.
