Q: I love steel-cut oats for their texture and nutrition, but all I do with them is make oatmeal. Do you have any suggestions for using them in baked-goods or other interesting preperations?

Editor: Yes! I love adding a scoop of steel-cut oats to baked goods. It adds a nice texture and a subtle oaty flavor. If you're making a slow-rising recipe, like one of the no-knead breads, throw them in raw. Otherwise, add a scoop of cooked oats to the batter for muffins, quickbreads, or even pancakes.

I make them risotto style, which I suppose is still technically oatmeal, but completely different flavor and texture.

After they are cooked I use them like any grain. Add them to pancakes, put them in omelettes, add them to salads or put them in soup. Lots of options.

I second the risotto use. I do this a lot and it's fantastic, it tastes very nutty. Like risotto it's very versatile. It does look gloopy so you don't really want to serve it to your guests.
Add oatmeal to chopped kale and a good strong chicken stock and lots of black pepper and make a traditional Scottish soup called Kale Brose. It's truly fantastic.
This is still a variation of normal oatmeal, but I added to one serving of steel cut oats 1/2 T Lemon Olive Oil, Salt, Pepper, Garlic Powder and McCormick's Mediterranean Spice Grinder along with freshly chopped basil. It was delicious! Would make a great base for an italian meal. I don't eat meat, but you could add some lovely grilled chicken or something to make it more filling. I'd maybe add a fried egg for a nice savory breakfast.

I use steel-cut oats in my cousin's version of Prettles, a breakfast meat. Prettles and Goetta are very similar. Both made from cooked beef and or pork, broth, seasoning and steel-cut oats. Simmered until very, very thick, molded in a loaf pan then chilled . Sliced thin and then browned in a skillet. Prettles is an old northern German dish. Goetta, famous here in Cincinnati, is also German.
