Q: Are there any recipes calling for coconut cream (like Coco Loco) that aren't cocktails? We have an opened can and don't know what to do with it.

Use any good recipe for coconut ice cream. But you put in about .5 cup or so of CoCo Lopez (maybe reduce sugar a little). It's so good!
Thai curries.
Would coconut rice work with that?
poke tiny holes (chopstick-sized maybe?) in vanilla cupcakes and pour or pipe it into the holes. makes the cupcakes more moist with a DELICIOUS coconut flavor :D
Puerto Rican Tembleque' --a great pudding style dessert that takes <5 mins to make.
There's a mango jalapeno smoked sausage I get, chop that up with red/yellow bell peppers, saute that together until they're all cooked, add in the cream of coconut and a mango/habenero (very spicy) sauce (prebottled). Served over rice, it's delicious.
You can use it as a base for just about any creamy soup recipe or in just about any kind of curry you want to make.

Macaroons (use it instead of sweetened condensed milk to amp up the coconut flavor).

Don't make a curry or any thing savory with it, it's not the same as coconut milk. It's super sweet. I second the idea of pouring it over a cake like a glaze, I've done that before and it's really tasty.
Thank you @NWATROUS for pointing that out, because as I was reading the replies I was thinking, "How gross. Doesn't anybody realize how sweet cream of coconut is?" This stuff is really very sweet, and unless you're using it in a dessert and diluting it as well as reducing the sugar (if not eliminating it in some instances) you won't be able to eat your dish at all.
