Editor: Ariel, pot cheese is a simple farmers-style cheese with a consistency between cottage cheese and the firmer, more crumbly cottage cheese. We would probably use it in tacos like queso fresco, or tossed with pasta or salads like ricotta salata. This breakfast casserole with cinnamon ricotta might also work out well with pot cheese!
