Q: I purchased half a local cow and have been working through all the cuts of meat. I'm having fun using ALL the parts and have picked out all the usable meat. I now have an entire gallon bag full of pulled beef and need ideas on how to use it, as BBQ gets boring quickly. Any suggestions?

We ended up with a bunch of leftover shredded beef after hosting a reception. I sautéed mushrooms and onions, add beef stock and some of the meat and served it over egg noodles. You could add sour cream and call it stroganoff.
Another idea is tostada salads - layer spanish rice, shredded beef, lettuce and desired taco topping in a tortilla shell or over tortilla chips.
Slow cook with some minced chipotles and adobo sauce and have carnitas.
Or, you could roll it up into a big batch of taquitos and keep them in the freezer for when you don't feel like cooking. They freeze really well!
Oooh, I'd love to be stuck with that! Off the top of my head-- use as the base for a hearty, three-bean chili. Or, use in an Asian-inspired dish: seasoned with some fish and sweet chili sauce and stuffed into summer rolls? Or with glass noodles in a large soup? Or simmer with a salsa verde and use as a taco or enchilada filling. Good luck!

Beef empanadas!
Green Chili burritos. I love making them with left overs. You can use fresh or canned green chilis which ever is easier. 1 whole onion chopped and the beef shredded. You will put in a crock pot if you can't be there to watch it or if you can be put on the stove over med. heat with beef broth and the onions and chili and some salt and pepper for taste.
allow the broth to boil down out of the beef and add another cup (keep some in reserve) as this happens. The more times you do this the more tender and flavorful the beef etc. Plan on about an hour or so if stove top. If in crock you will need to strain and put on stove to evaporate the remaining juices so they aren't so runny. So yummy!
Taco filling - sear it on the stovetop until you get crispy edges, toss it in a corn tortilla with chopped onion and cilantro. Eat.
I've also made filled yorkshire puddings - mix your beef with vegetables and aromatics, dump it in a yorkshire pudding, bake until the edges are crispy and puffed.
