Q: I grabbed a few bottles of key lime juice at the liquor store last week, figuring I could use it to make quick margaritas and it would be just fine. Well, it wasn't and now I'm stuck with a ton of key lime juice. Aside from key lime pie, any suggestions?

I use this brand just as lime juice...it seems to work perfectly, although I admit that none of my recipes are lime-centric. Except for margaritas, for which this brand works wonderfully!
I'm not usually a gin drinker, but the other night a friend made me a cocktail with gin, sweetened lime juice and club soda. It was incredibly refreshing. I'm not sure what the name of said cocktail is, but I bet you could make your key lime juice work in it.
Add ginger+garlic+soy sauce+a bit of brown sugar, and you've got a FANTASTIC marinade for red meat...
Maybe for marinades?
I still don't see why you can't use it for margaritas - is it that you don't like the flavor of key limes vs. limes? The product website even has a load of recipes for you to try (including two margarita recipes). Or, it sounds like you were expecting it to be sweet? I'd adjust w/some simple syrup. Or try something else from the list!
I use this stuff all the time as add in's to water and soda and anything that needs lemon or lime (like marinades and pastas) when I don't feel like juicing a lemon or don't have any. I can't tell much of a difference if it's just added into things. It's just an easy way to add acid to something.
I like lime juice in dressing for salad, either a green salad or a fruit salad. Granted, that's not going to use up very much at a time.
Maybe limeade? Sweeten it and make popsicles?

I've been putting some of that juice in my mango-greek yogurt smoothies lately.
mostly I keep it around for the key lime pies.
Punch for a party?
Could you not theoretically make lime curd out of it? Is it sweetened or unsweetened? If unsweetened lime juice is also wonderful on roasted beef or pork for tacos with raw white onions.
Or, you could do as my boyfriend does, and just add a splash to your glass of water or iced tea to make it tastier. I could see it being super-tasty in colas or cuba libres (coke, white rum, lime juice). Mmmmm... cuba libres....
@Jillian, it's a Gimlet. Yummy! I sometimes also do a splash of grenadine which makes it a gin daisy.

Ceviche?
Definitely gimlets! Just vodka + lime juice, shake w/ ice and strain. Or you could combine with some tequila, orange liquor or juice and some water and make a margarita sorbet (if you have an ice cream maker)! David Lebovitz has a good recipe, and you could just omit the lime zest.
I also use lime juice for a flank steak marinade, or you could just use it as a little punch-up to fish dishes like scallops. Add it to salsas too!
Also seconding the ceviche idea. Perfect for summer, since you don't have to turn the stove on.
This weekend I will be experimenting with Key Lime Hollandaise sauce!

I'm sure you have had lemon bars, so I use this juice to make lime bars. Add a few drops green food coloring and key west lime juce instead of lemon juice. Yummy
Bar tip: If there is soda with the gin and lime, it's a gin rickey and not a gimlet. Gimlets don't fizz.
Mix with powdered sugar and melted butter and use as a glaze on banana nut bread..lads an amazing dynamic (especially if you replace the nuts with shredded coconut)!
