Q: I recently bought bamboo rice because of its gorgeous green color. But I have no idea what to do with it! Any recipe suggestions?

I cook it in a rice cooker the same way I would any other variety and eat it plain. It has a creamy, delicious flavor all on it's own!
I always buy some around St. Patricks Day. It is really creamy (not a good sub for sticky rice). I wonder if it would make good rice pudding.
I used some to do an ultra-fusion risotto. I used mirin instead of white wine, veggie broth, bamboo rice, mixed dried mushrooms, a touch of soy sauce, some coconut milk and topped with Chinese chili sauce and pan-fried tofu. It was fantastic. If I can ever find more, I'd love to do the same with a miso broth and see what happens.
We started with this recipe, but basically completely winged it from there.
I imagine it would make a nice colourful rice salad with toasted nuts and fetta.
I've never seen this before at my grocer. Do I need to make a special trip to Trader Joe's or Whole Foods?
