Q: My boyfriend is a big fan of pork, as evidenced by him cooking 6 pounds of pork shoulder on Sunday in our brand new slow cooker. Problem is, he's now going out of town which means that I am responsible for putting it to good use (i.e. eating it all), which is impossible. Any suggestions for how else to eat this delicious meat other than in tacos or pulled pork sandwiches (which are becoming a little boring)? Thanks a ton!

Editor: Jackie, the good news here is that pulled pork freezes brilliantly. In fact, it's probably my favorite meal to freeze. Put it in one-serving-size containers — maybe with some beans — and you have lunches for a week. Also check out this post:

With a little of the right kind of bbq sauce, you can make Bánh mì!
Definitely freeze it! It's so easy to get tired of something after eating it for too long. I like separating it out in individual portions so I can easily make myself a BBQ pulled pork sandwich for lunch. Warmed over some cornmeal pancakes is pretty spectacular, too!
Stuff it into some pablano peepers with some corn peppers and pepper jack cheese. Cook in the oven at 350 for about 45 min and enjoy. I do this with left over BBQ pork or beef. Amazing and you can flavor it any way you would like.
Pulled pork + sriracha + fork = blasphemy. Sweet, sweet blasphemy.
Definitely freeze it, but also it's pretty good in fried rice, and keep small servings separated in the freezer to drop in any time you cook beans or other slow-cook type foods for extra flavor.
Besides freezing, which is what we do with leftover crockpot pulled pork, here's a few ideas:
BBQ spaghetti... pulled pork, bbq sauce mixed with tomato sauce, toss with cooked spaghetti or ziti noodles and some shredded cheese...
If the meat is "unsauced", enchiladas are definitely an option and freeze well. Choose your favorite enchilada sauce (homemade or canned) and toss the meat with it until just moistened, add some shredded cheese, wrap in flour or corn tortillas and then top with more sauce. Freeze or bake and eat.
Use as you would roasted pork in a cuban sandwich...
We make pizza with ours. Sounds goofy but make a bbq chicken pizza but sub the chicken for any leftover grilled meat you have (we've done it with brisket as well). Thin red onion, good stringy cheese, bbq sauce and some grape tomatoes topped with pulled pork is a great summer dinner. Especially if you make it on the grill!

Ditto on the freezing. It is not exactly stew season, but google Brunswick stew just in case.

If it is unsauced, I would make a pork ragu sauce from it and serve over bowtie pasta. Yum!

We chop ours up a bit and make a wonderful spicy chili out of it.
We also make grilled cheese sandwiches with the meat stuffed between two slices of cheese. Divine!!
I've used mine to make raviolis or beggars purses that were really good. Process the pork with some goat cheese and balsamic in a food processor to make it really finely chopped. If you don't want to make pasta, use wonton sheets to make the raviolis.
If the pork is already sauced:

I LOVE leftover pulled pork for banh mi, as others have mentioned. Plus it is a great excuse to stretch the homemade mayo muscle that I need to work on.
As others have said, it is one of the BEST freezer items. But if you don't have the space in the freezer, that just won't do.
I like pulled pork with potato pancakes and stewed apples (kinda like porkchops) and it's also pretty yummy as an additional to grilled cheese sandwiches with Meunster and a little pepper relish.
How about a tart with puff pastry squares, caramelized onions, pulled pork, and maybe something creamy like goat cheese?

I second (or third or fourth, I lost count) of the pulled pork enchiladas. But don't listen to those people saying don't do it if it's been BBQ sauced. Just make BBQ Pulled Pork Enchiladas! I did it with my last batch and just added a little BBQ sauce to the enchilada sauce for a slightly sweet sauce with kick!
