I've confessed to being a rather lazy lunch-eater, but in honor of our lunch week, I'm getting my act together. Want to hear what's been on my desk during lunchtime this week?
Inspired by a local cafe's really delicious version of the classic spinach-apple-blue cheese salad, I've been making my own. I toss baby spinach with my favorite balsamic vinaigrette (I usually have a big jar of it in the fridge), and add a handful of chopped apples, cooked bacon, and crumbled Gorgonzola. The kicker, though, is the half cup of cooked barley. That really pads this into a filling salad that keeps me satisfied through the rest of the afternoon.
