I usually bring salads for lunch, using vegetables from my CSA share and leftover proteins that I cook throughout the week. I cooked a whole chicken a few days ago so my lunches have reaped the benefits this week. Today is a butterhead lettuce salad with chopped chicken, sliced tomato and sliced sweet dumpling squash. I also have some yogurt and a peach. Happy Friday!
Sauteed swiss chard & onions in two thick corn tortillas, topped with avocado and tapatio = today's lunch eaten in my kitchen while working at home.
An "add boiling water" rice noodle soup bowl, augmented with a spoonful of peanut butter and some cooked broccoli & cauliflower = yesterday's lunch eaten at my desk at work (much more indicative of my typical weekday meals).
A banana.

I'm eating this curried tuna salad - I originally found the recipe on allrecipes.com - I like to make a batch at the beginning of the week and eat it for lunch two times during the week. It's so good (even though you may not think it sounds that good!) try it!

A sald of romaine, tomatoes, avocado, green onions and canned alaskan salmonm, topped with olive oil and vinegar; red grapes on the side.
I opened a can of black beans and prepared them as I mentioned on the earlier post. I just finished a tasty burrito.

Leftover brown rice and tofu- the only thing I could throw together before work this morning.

The last piece of a crustless leek and tarragon quiche I made earlier this week, a banana, and yogurt.
two small corncakes with a little vegan chill/honey butter and a few slices of avocado.
Carrots w/hummus, green grapes, dried figs, and a big salad with chickpeas, cucumbers, hard boiled egg, and heirloom tomatoes. I'll devour an apple on my commute home!

1/2 whole wheat pita with fromage blanc, tomato & avocado, and a tomato-cucumber salad. Nectarine, if still hungry after that.
Black bean salad! Black beans, cherry tomatoes, corn, evoo, vinegar, and fresh basil. It's a very summery meal, so I'm glad it has warmed back up here in the Northeast.

A whole-wheat English muffin layered with homemade sauerkraut and a sliced hard-boiled egg; plus a second egg to eat whole with salt & pepper. Eaten in my delightful work kitchenette, on a real plate, with real silverware. It may not sound like much, but it was gastronomic bliss for me. Earlier I snacked on some applesauce, and if I'm hungry later, I've got some yogurt (and a little more sauerkraut) in the fridge. But I won't be eating those together.
Saurkraut and egg, mmm, sounds yummy!! I should try this weekend!
I'm having brown rice w/ black beans and andouille sausage, and sambal long beans. Spicy is good. <3
i made fish soup with a big mouth bass my (7 year old) brother caught last weekend. it has tomatoes, chili pepper, onions, celery, parsley, and potatoes. and fish stock that i made from the fish carcass after i fileted it! very yummy.
Leftover arugula pesto, white bean dip, and roasted eggplant on a pressed sandwich with jarred Ajvar spread and queso fresco. MmmM! Working from home means you can make great hot sandwiches!
A whole wheat tortilla pizza with turkey pepperoni.
Salad. A mescalin mix with heirloom cherry tomatoes, white beans, and a homemade fat-free herbed lemon dressing (made at the beginning of the week).
My husband got soba noodles with bok choi in a black bean sauce with a hard-boiled egg. Not a very traditional use of soba noodles, but my husband love them that way.

Roast beef on a whole wheat tortilla spread with a Laughing Cow cheese wedge, spinach and locally grown tomato, as well as Greek yogurt and honey. Baby carrots for latter...
It's Friday, and I haven't eaten out for awhile, so I'm having a Specialty's Sandwich (caprese sandwich... THE BEST EVER....)!!
Deli ham and light havarti on whole wheat bread with mustard, tomato and cucumber salad, low fat Activia yogurt and a nectarine. I also keep high fibre oatmeal bars, bananas and string cheese around in case I get the mid-afternoon munchies.
A shredded beef burrito from the taco truck near work. Authentic Mexican and oh so tasty. Plus, it is so filling, I probably won't need to eat dinner tonight.
I'm lucky enough to have an employer who provides lunch, so I haven't decided yet. It's between roasted chicken herbed mushrooms and marsala or the leek soup with a salad.

An open face BLT: Ezekiel bread toasted and spread with a chipotle Laughing Cow wedge, layered with balcony basil, covered in some smashed avocado and crispy Neuske's bacon then topped off with heirloom tomato slices.
Crazy delicious.
Just finished some leftover Summer Pasta--corn, zucchini, tomatoes, and goat cheese. Now I'm enjoying a new crop apple.
I was so inspired by yesterday's post on tuna noodle casserole that I immediately cooked a double batch - one for dinner last night and lunches today and this weekend, the second to freeze for after our baby arrives in a couple weeks. Not the healthiest meal, but it definitely hit the spot.
rice covered in mushroom sauce. very plain meal, but still delicious. after that, my supervisor gave mt fries and gravy. YUM

leftover orange chicken and veg. I used Trader Joes orange chicken, a big pot of jasmine rice, and fresh carrots, broccoli and peas a few nights ago. I mixed it together in a glass jar - this keeps the rice moist and the veg from getting soggy - and brought it to work for eating over a few days. Yum!
A Thai chicken wrap! I invented them for my husband, who is a terrible junk-food eater if he doesn't take a lunch. It's a whole-wheat tortilla filled with homemade sushi rice, julienned carrot and cucumber, thai-marinated chicken breast, and spicy peanut sauce. Absolutely delicious.
I marinate the chicken breasts for 12 hours in coriander, cumin, fresh ginger, fresh garlic, lemon juice, soy sauce, a dash of oyster sauce, a dash of sesame oil, and a little canola oil to hold it all together, and then bake it for 20 minutes at 400, and slice.
A coke and bag of Dorritos. :(
leftover ricotta ravioli with olive oil and herbs plus a dash of garlic that may have been a little too big for my co-workers sake. oppps. :)
a cup of warmed over coffee with a packet of hot cocoa mix stirred in.
we'll see how long it takes before i am needing the homemade non-fat yogurt i packed....
a few savory rice crackers (trader joe) with a tiny piece of gouda, some sunflower seeds, the last of the organic corn flakes, and orange juice.
I usually don't have a great lunch unless I go to a restaurant, which is rare - dinner is the main meal.
It's slightly chilly in Seattle today so I had some clam chowder with lots of Chipotle Tabasco! Yum...
I was out of leftovers this morning so I pieced together the following:
A banana, a microwaved ear of corn, frozen peas from the bag I keep in the office freezer and 6 frozen potstickers (ditto).
I swiped a leftover roast beef sandwich from an event in the conference room yesterday and may tuck into that this afternoon if it's not too...squishy.
But I'm dying for a cookie.
oh dear...i'm at my mom's house and had white bread, tomato, american cheese and mayonnaise sandwich with tortilla chips. eeks!
i usually do not eat american cheese and i prefer soy mayo and wheat over white but this sandwich hit the spot!
when i'm at work, i almost always bring a salad and maybe some cheddar mini rice cakes.

Usually I make a big pot of soup and then have it with some bread (and maybe some greek yogurt) at my desk at work. Since I work second shift it's more like "dinner" than lunch. This week was lima bean and pepper soup with a little berbere.

What I will be eating is pre-bought sweetcorn soup - tasty, filling, low-calorie and, while not home-made, much cheaper than buying take-away every day. What I wish I was eating is that tuna salad wrap - looks so yummy, and so much more delicious than tuna has any right to! Will have to give it a go...
