Q: My finance and I both work long hours and have very long commutes. We like to cook and are members of a CSA, so we usually have lots of fresh veggies, eggs and staples in the house.
Early in the week we make dinners, but by the time Thursday rolls around, we are often so worn out that we start to think about ordering delivery or worse, eating mac and cheese from the blue box. I'm looking for advice for quick and easy meals to make on Thursday.
Also, what do you keep in your fridge (like pre-cooked, pre-diced chicken) that makes whipping something up quickly possible when you are so tired that not eating seems like a better plan than cooking?
