Q: Boursin was buy one get one free at our grocery store the other day.
While I love Boursin just by itself with some good bread, is there anything interesting I can do with it?

Du pain, du vin, du Boursin...
It's great in the middle of an omelette, maybe with some extra herbs. Also good on top of simply steamed vegetables like broccoli, and also potatoes. Use instead of flavoured butter on top of a steak.
You can make a tasty and easy pasta dish with it as well! Bake up some ground beef or chicken with some garlic/onions and add spinach or broccoli. Boil the pasta, when it's done mix with the boursin and add to the meat and vegetables. Season to taste! you can leave out the meat if you want a vegetarian dish...
Like the previous two posters I add it to pasta and eggs. I also think it would go nicely in stuffed mushrooms or zucchini.
a sandwich shop near me does something AMAZING with it on one of their sandwiches -- on ciabatta: turkey, vermont white cheddar, mixed baby greens, sliced granny smith apples, crushed cranberries, and boursin spread on the top and bottom layer. YUM.
Spread it on top of a wheel of Brie, wrap in puff pastry and bake!
I almost always add the garlic flavored Boursin to mashed potatoes, with some cream, salt, and pepper. My mouth is watering just thinking about it!
Yeah, I've seen it used to great effect in scalloped and mashed potatoes. Also, I've seen it mixed with spinach and stuffed/rolled up into a chicken breast for an entree--basically pound the breasts quite flat, salt and pepper, spread on a layer of boursin, add a layer of blanched spinach, and then roll up, placing seam side down in a baking dish. You can also add butter/breadcrumbs on top if need be.
I suggest "ravioles" with a mix of pepper Boursin and small greys shrimps. If pepper is too strong, the classical "ail et fines herbes" also works...
I saute up some shallots in a little olive oil, add the Boursin cheese and some chicken stock and make an amazing sauce for chicken.... actually it is amazing over anything... asparagus, fingerling potatoes, from a spoon....
I put it in an omelet or a simple sauce for pork tenderloin.

There are lots of good recipes on the boursin website; but here's what I've used it for.
Make a good marinara sauce. Just before serving - stir in a lot of boursin cheese. Toss with your favorite pasta. In addition you can (optionally) sprinkle with cooked and crumbled bacon and flavored croutons.
Place rounds of boursin in a thick tomato sauce flavored with olives. Broil until the boursin is mostly melted and slightly browned. Eat with fresh crusts of french bread.
Roll up an omlette or crepe around a thick smear of boursin, some chives or spring onions, and a sprinkling of diced peppers. Optionally add chicken, tofu, beef, or bacon to the mix.
In a square of puff pastry - mix 1 tbsp cranberry preserves, 1/2 tsp boursin. Tie the edges together to make a packet. Bake until brown.
I like to stir it into polenta, or with scrambled eggs.
I just had the same question! I found a gournay in my fridge from a party last month and was trying to figure out how to work it into a meal. I'm thinking orzo and tomatoes and a little basil?
Great on baked potatoes, or use it in a vegetable gallette.
I love it as grilled cheese.
Also, great (and easy) hors d'oeuvres:
* spread on puff pastry, top with spinach.
* cut into strips and roll.
* bake.

take a bunch of asparagus, wash and cut into 1-2 inch pieces, saute in a little olive oil and then add some boursin and stir until coated. i actually find that the faux boursin (comes in a little oval container with a green top) melts a little better.
Stuff it in some chicken! Cut a little pocket into chicken breasts, stuff it with cheese, parsley, and slivered almonds, and then push it together with a toothpick----cook in a frying pan with a little oil until done.
Seriously, seriously good.
Put a spoonful in your oeuf cocotte instead of cream. It goes well with eggs, as other commenters have already noted.
This also works nicely with Laughing Cow cheese triangles.
I use it in a summer veggie tart.
Pie crust base, boursin spread on the bottom, layers of yellow squash, zucchini and tomato, baked until the veggies are soft.
I make bruschetta with Boursin. Top your toasts with a schmear of Boursin and some cherry tomatoes, roasted with garlic and olive oil.

When I lived in Providence there was a restaurant that made great burgers. One of them was topped with boursin, sprouts and sunflower seeds. Odd combo, great taste.

I cut up pears, put a bit of the cheese on the pear and then wrap with prosciutto and then bake in the oven for 15 mins.
How do you pronounce Boursin? I've been saying it like this: boar-SAHN... is that right?

i roll out crescent roll dough, spread the boursin on it, sprinkle on some chopped spinach, roll it up and cut it into little pinwheels. bake as crescent roll dough directs, and it's a great little appetizer--always a hit at parties!
I love to pan-roast mushrooms and finish them with garlic and butter. Then I put them on crostini with boursin on them and give them a short broil.
I use it for pasta sauce too, with champignons.

my mother used to make a delicious spinach pate with boursin
put it in a shallow dish with marinara and bake in the oven. spread on crostini's. GREAT appetizer.

My friend used to make an amazing chicken thing for special occasions, with boursin, ham and a flattened chicken cutlet all rolled up and fried in butter, served on egg noodles.
I like to spread it on flat bread, top that with caramelized onion and fennel, and sprinkle with just a little bit of mozzarella and Parmesan. Pop in the oven until the mozz is melted and a little bubbly. Quick and tasty mini pizzas.
There is an awesome burger place in Nashville that does a lamb burger with boursin and arugula. I can't even think about it, it's so good.
