Q: In the middle of sweet corn season, it's really frustrating when you buy a few ears that are duds — too old, maybe, but definitely just not sweet enough to eat off the cob or in a salad.

Any suggestions for using these ears?

Editor: Kim, our first suggestion runs (of course!) to dessert:

Sweet Corn Ice Cream - The corn kernels are just steeped in the liquid and discarded afterwards.

Readers, how do you use not-so-great sweet corn?
