In the middle of sweet corn season, it's really frustrating when you buy a few ears that are duds — too old, maybe, but definitely just not sweet enough to eat off the cob or in a salad.
Any suggestions for using these ears?

- The corn kernels are just steeped in the liquid and discarded afterwards.
