Good Resources for Healthy Vegetarian Kosher Cooking?

Q: My sister just had a baby and I would like to cook them some meals, either for freezing or for eating immediately. The challenge for me is that she and her husband keep kosher and do not eat meat except fish. They are also pretty health conscious.

Any good recipe suggestions and resources for healthy kosher cooking would be helpful as this is unknown territory for me.
