Q: I love Costco. I love them to death. I also love dark meat poultry. So when I saw that Costco had pasture-raised chicken thighs for 99¢ per pound in freezable pouches, I bought two packages worth, which happens to be 20 pounds.
I have been using a Martha Stewart recipe to roast them with a lovely lemon and honey marinade/glaze, then chopping them up for stir-fries, but I'm looking for more good recipes, especially those involving roasting (my favorite method of preparing chicken) or grilling (it's winter, but I'm brave). Thanks!

I like chicken thighs for ANY crockpot recipe. They don't get dry and stringy like white meat can.

Any recipe for pork that you would do in the oven can be adapted for chicken thighs.
I also have a really easy way with them--wrap each thigh in a strip of bacon and roast at about 400 deg until desired doneness (45 min to an hour). Skin on, of course, skin gets so crispy. When they come out of the oven, squeeze lemons all over them. It is so yum.
I bought those too! We love cutting the thighs into bite-sized pieces and making an Asian marinade with fish sauce, soy oil, ginger, garlic, Sriacha, and soy sauce (let sit 12-24 hours) then grill. Works in lettuce wraps, rice bowls, etc.

The Braised French Onion Chicken with Gruyère is AMAZING, complex flavor and very very tender. I think one of the best chicken dishes I have yet prepared. the caramelized onions were the most time intensive part of the recipe.
I also tried this recently, and it was delicious especially considering it only took 5 minutes of preparation!

I have to second the above vote for the French onion chicken dish that's here on Kitchn--it is truly fabulous. (Although when I followed the recipe's cooking time my chicken was not nearly cooked! I think I had to nearly double the cooking time...)

I love chicken and turkey thighs! We bought 10 organic turkey thighs from a meat shop that was going out of business in 2012. I use them for alot of soups and stir-fries.
Here's a tried a true recipe I have been using for 20+ years:
TEXAS WHITE CHRISTMAS CHILI
approximately 32 oz chicken or turkey parts (I like breast and thigh, a 1:4 ratio)*, deboned and chopped
2 medium yellow onions, chopped
4 garlic cloves, chopped or to taste
1-4 Tbsp peanut or olive oil (eyeball it)
1 Quart chicken broth, either homemade or canned
4 15 oz cans cannellini beans, rinsed and drained
1 15 oz can cannellini beans, drained and mashed
2 4.5 oz cans chopped roasted green chilies or 1 cup hatch roasted chilies or 1-2 cups any other green chilies you desire (a mix of mild and a little hot)
1 tsp sea salt
3/4 tsp dried oregano
1 tsp ground cumin
1/2 tsp chili powder
1/2 tsp ground black pepper
1/4 tsp ground cloves
1/8 tsp ground red pepper
1 15 oz can crushed tomatoes with juice (optional)
crushed red pepper to taste
Saute chicken, onion and garlic in hot oil in a Dutch oven over medium-high heat 10 minutes or until done. Stir in broth and next 10 or 11 ingredients; bring to a boil. Stir well, cover, reduce heat to a low simmer, simmer 30 minutes. Adjust seasonings and add crushed red pepper to taste.
Serve with toppings: sour cream, chopped fresh cilantro, sliced avocado and/or grated white cheddar cheese.
This freezes really well for fixing on those late nite campout setups when you don't want to really fix anything but just want to eat. A bit of prepared jalapeño cornbread muffins and heat it up and you are all set for the evening!
*You could also use just dark meat or ground turkey or chicken.

I accidentally bought a bag of frozen chicken thighs thinking it was chicken breasts. ( I so totally need this site...as you can tell I'm not that great in the kitchen) But I threw thm in the crockpot frozen with two cans of fire roasted salsa and a packet of taco seasoning and let them cook on low all day. THe meat fell right off the bone and I added a can of rinsed black beans to it for the last 20 mins or so to heat. I also removed the skin from them when I was shredding the meat off the bone. It made great chicken tacos wrapped in some corn tortillas. The leftovers were friged for the night and then heated back up on the stove the next day with a can of corn, chicken broth, and a can of kidney beans. Don't drain the juice from those cans either. Just heat and serve over tortilla chips and some avacado slices. Great way to get two meals.
You could brown them and then braise them in Mexican/New Mexican red chile sauce, either homemade or store bought (like Frontera's), for about an hour or so. Serve over rice and top with sour cream or cheese. Or you can shred the chicken and make enchiladas or tacos, etc.

I almost hate to admit this, but my family's favorite go-to recipe for chicken thighs is from Nigella Lawson (I know, I KNOW!!). I didn't think they'd like it but my kids clamor for it all the time (I get actual HUGS and jumping up and down, really). I tend to use more marinade so we have extra sauce at the end and I don't always add the sausage because it's really good just on its own:

I second adobo chicken! I used to have a recipe from an old Filipino woman who was actually also my ballroom dance instructor, but I seem to have lost it in the shuffle of the past few years. At any rate, this dish is wonderful and is a perfect way to use up chicken thighs!

I like baking chicken thighs with olive oil and chopped turnips. Add a dash of rosemary and basil and it's quite tasty and easy.

While on my own quest for recipes for chicken thighs, I came across this one and it is AMAZE. Crispy, smoky, sweet and so so so easy.

I halved the cumin and added a tsp of cardamom, since cumin can get a little... feet-y for my preference. I now keep a mason jar of this spice blend in the cabinet for when I don't have the brain power to make something more complicated. It's also really tasty sprinkled on roasted squash seeds.
99 cent pastured chicken thighs? sounds unrealistically cheap. caveat emptor...
roasted chicken thighs tossed in a coconut thai curry sauce or creamy tikka masala type sauce would be delicious and fairly easy to make.
alternatively, i like to coat grilled chicken in a honey ginger glaze. you can grill chicken with lemongrass and serve it with pho. also jerk chicken is super flavorful and easy.

I find it works better with skin-on chicken, and if you heat the soy sauce (dark) in a stainless steel pan before adding the chicken pieces.

That's annoying - so many great recipes, and I can't get boneless chicken thighs. Breast go dry on me all the time, and I'm too lazy to debone chicken thighs.
I always have chicken on hand but if I don't have the time to prepare some I buy a roasted chicken and make a few meals out of it. Recently I made a Chicken Pesto Mozzarella Quesadilla for my 20 month old son and it was delicious! I made it again the next day for my husband and I!!

Debone and lay flat in a roasting pan. Sprinkle with salt and pepper. Apply garlic powder heavily, juice limes over top(1/2 per breast-ish).
Cook at 375 to temperature. Enjoy chicken and amazing sauce over your chicken and mashed potatoes.
They're a mainstay in my kitchen - all of the following recipes call for chicken thighs to be roasted:
i) Rub with a mix of (in descending order) sumac, cumin, smoked hot paprika, thyme. Serve with rice and peas;
ii) Roast atop potatoes. Add more more whole cloves of garlic than look like enough, and, with 15 mins of roasting remaining, add whole sprigs of rosemary
iii) DeBone them, stuff the cavity with a mix of breadcrumbs, minced garlic, chopped preserved lemons, and cover the thighs in vine leaves. Serve with couscous or bulghur wheat.
iv) Cook with garlic sausages, white beans and breadcrumbs as you would a cassoulet.

I hardly check back on posts I've made, but I wanted to see what other suggestions had been offered... lo and behold, I dissed a very popular celebrity chef and I apologize for being so public about it! I failed miserably w/my poor attempt at humor and I should just keep my ill-formed comments to myself.
However, I will say that my gut reaction to Nigella Lawson is quite visceral: I honestly can't handle watching her preen on television. Her mannerisms, fridge-gorging, and boudoir looks to the camera make me squirm. Friends have also attested to the same reaction on their part. So yes, I can't believe I enjoy a recipe from her because I usually avoid her show for those reasons.
This recipe, however, is quite good so I have to give her credit for a really nice chicken dish. I just didn't watch her make it on tv.
