Q: My fiancé and I teach after school hours and aren’t able to have dinner until about 9:30 or 10 p.m. Because of this, we like to use the slow cooker, so the food is ready when we get home. That was great for a while, but then we decided we didn’t want to eat big hunks of meat that late at night.
(Plus, we want to eat less meat in general.)
Vegetarian slow cooker meals are easy enough, but here's the catch: I’m gluten-free, and he is trying to lose weight, so we’re cutting the carbs. All my recipe books leave me with are varieties of bean stew, and one can only eat that so many times. We are longing for something hearty after a hard day's work. We eat a smoothie for breakfast and salads for lunch. We thought about doing the big meal at lunch, but here in Michigan, coming home on a snowy night does not call for a light meal of salad at the end of the day.
Please help us find recipes that are gluten-free, low-carb, vegetarian, and filling for a quick-cooking, after-work meal (or a slow cooker).

Editor: I know you don't want too many recipes with beans, but I really love this recipe for Curried Vegetable and Chickpea Stew. It can be made in the slow cooker and it can definitely stand up to cold Michigan winters.
