Q: I recently made some ginger syrup and wanted some suggestions for cocktail recipes that utilize this ingredient. I was hoping for drinks that didn't use vodka and weren't cloyingly sweet. Any help is appreciated!! Thanks!

It's definitely not too sweet, and mixed with a slug of bourbon it makes a great summer cocktail.

1 part syrup, 1 part vodka. Shake with ice, serve and enjoy!

This is a great cocktail, mock or not, Ginger Pineapple Sparkling Punch
This one does include vodka, but it also includes champagne :) Ginger Champagne Cocktail
one part syrup, one part gin, lime, and muddled mint.
I use it in Dark n' Stormy's. Mix ginger syrup with seltzer, and dark rum, serve over ice.
Gin Buck = mix the syrup with seltzer, add gin, and a squeeze of lime juice.
I would mix it with whiskey and seltzer and lime.
Wisteria in ATL serves a cocktail called "Roots and Blooms" which is Ginger Vodka, Fresh Basil, Lime Juice and Ginger Beer. You could definitely play with this and do something like a mojito but with basil instead of mint and add ginger beer to make it fizz a bit.
Ginger margaritas are awesome. Just make it like you normally would but add a little ginger. This is also great using grapefruit instead of lime.
Add it to lemonade, delicious!
I love ginger syrup in lots of cocktails, but especially with bourbon, mint, and lemonade (Front Porch Lemonade). We drink that all the time in the summer.
I also heartily agree with the Dark and Stormy recommendation!
Rum, syrup, lime juice, ginger beer, basil=heaven on earth.
We served this at our wedding with home made ginger beer and it was a real hit. I suggest Reed's extra strong ginger beer otherwise.
I had the same "problem" of extra ginger syrup a while back, and I made a few dark & stormies and put the rest in cocktails made up of muddled mint leaves, gin, ginger syrup, and seltzer. No proportions, sorry - I just fiddle with it until it tastes right.
