Q: I recently bought a can of salmon. I'm pregnant and have been trying to get fish into my diet, especially salmon, by any means possible.
There's only one problem: I have no idea what to do with canned salmon. Any ideas?

Salmon burgers... similar to the croquette but with an egg mixed in to hold it together and lemon zest.... fry in a little olive oil and top with dilly mayo and spinach on a toasted bun.....

warm pasta salad, with salmon and green peas for crunch :). To get the right consistency, you have to shred the salmon really finely before adding it to the pasta. I add either barely wilted spinach or arugula as well. A little olive oil, balsamic or cider vinegar, and fresh crushed black pepper and it's a quick weeknight meal.
Forgot to add, make sure you check the sodium levels on those, some are really high, I try to get the %3 per serving kind, it's the lowest I've seen around here.
I may be a savage, but "Salmon Noodle Cassarole" is pretty darned tasty. I just use my standard "Tuna Noodle Cassarole" recipe but swap salmon for tuna. Yum!
I had some Vietnamese rice paper disks last night that I need to use up, and happened to "invent" something that was delicious: soak a disk in water for a minute, place on a damp towel. Add some lettuce (mine was straight from my garden!) which is lightly covered in vinaigraitte. Spoon on a tablespoon or so of canned salmon and roll up burrito style. Enjoy!
I just take it out of the can, take the bones out and piece it up and put it in a pan with a little olive oil and roughly chopped onions and fry it up! So darn good over white/brown rice!
Another simple pasta recipe: toss the salmon (I especially like lemon pepper and other flavored kinds) with pasta, add roasted red peppers.
You don't actually have to take the bones out. They are quite soft. Just mash them up with the meat and you won't notice them. This makes your salmon very high in calcium! Important for you and the baby.
I second salmon patties/burgers. I usually toss mine in a cornmeal crust and bake them. They are fantastic either in a bun or eaten on their own. To bind them together throw in an egg, some mashed potato or fresh breadcrumbs, and season with some lemon zest, fresh dill and Worcestershire sauce.
My grandmother used to make amazing salmon patties. She usually had macaroni and cheese with them; I always requested that meal when I went to her house! Jantinarose is correct about the bones. I actually used to like to eat them out of the can before the salmon patties were made (that sounds really gross now that I think about it...).
Salmon pie. Boil up a few potatoes and then mash them with a can of red salmon. Put inside pie shell. Sprinkle geeeeenerously with black pepper. Put the top on. Bake a 350 for a bit. Yummers.

Strangely I can't stand canned salmon. I will pretty much eat anything, but canned salmon just tastes too weird to me.
I use mine in salad but also have a recipe for salmon patties that are pretty darn good. The recipe came from a parenting magazine, of all places, and requires only shallots, panko, an egg and 1 can of salmon. I recently used a can of salmon in a chowder. Corn, cream, chicken broth, salmon...SO yummy. Only it made me break out in hives! Won't be doing that one again... :)
...I had it in my mind that pregnant women shouldn't eat fish. Definitely no mercury-heavy stuff like swordfish and tuna (I think). Is the rest okay to eat then?
Salmon quiche! I just made some last week. It was delicious.
with the canned stuff we do salmon cakes with a poached egg over greens. you can also gussy up a tuna noodle casserole; it takes to salmon really well. fun-shaped noodles, creamy sauce, and lots of parsley, and artichokes are my favorite.
Tuna Avocado Donburi, but with Salmon. Trust me, if you like Japanese food, it's excellent!

I like making salmon salad using Greek yogurt and a little lemon juice or vinegar instead of mayo, plus preserved lemon and/or capers and red onion or shallots or green onions.
I have a can of salmon in my pantry and I had a salmon nicoise salad in mind. Arrange the following on a platter.
chopped tomatoes
blanched green beans
tender greens
hard boiled eggs
olives
red onion
salmon prepared with capers & chopped onion
oil & vinegar
I might also do an Asian inspired lettuce cup: mix the salmon with ginger, toasted sesame oil, tamari, green onion, chopped water chestnuts and a little wild rice for substance. Serve in iceberg, red romaine or boston lettuce cups with daikon (asian radish)

My mom would clean the bones out of the canned salmon and and then mix the salmon into a cream sauce with frozen peas. It was served over baking powder biscuits. It's still a comfort food. Lots of good ideas that I'd like to try.
I made a 'clean out the fridge' meal that turned out to be pretty tasty. Saute some sliced fingerling potatoes in olive oil with a couple of smashed cloves of garlic. When the potatoes are tender, add in a whole big bunch of spinach and wilt. Salt and pepper as needed. Add in a can of salmon at the end, stir just to heat through. Healthy and filling!

@nikki moore, most fish is perfectly fine to eat in pregnancy. You're just supposed to limit the amount of oily fish you eat - tuna, salmon, mackerel etc. because it's higher in certain pollutants. But it's actually recommended that you eat it once or twice a week. (Swordfish, marlin and shark are the no no's because of the mercury levels, as far as I know.)
Salmon salad sandwiches. Like tuna salad, only with salmon, and seasoned with fresh dill. Delicious!
this is a classic recipe from my mother's haitian kitchen...
1) make a mashed paste of about 4 garlic cloves, some sea salt and crushed black pepper.
2) fry it in a couple teaspoons of olive oil.
3) add some canned or fresh crushed tomatoes, let sizzle, and add additional salt to taste if necessary.
4) then mix in the salmon, and an optional dose of fresh or frozen green peas.
5) and voila! eat with white basmati rice and consider yourself lucky.
One of my favorite winter, "instant" dinners for one is pasta noodles with a couple of forkfulls of canned salmon, olive oil, a squeeze of fresh lemon juice, garden peas, and maybe some grated perorino cheese. So fast and delicious!
I like to make a simple spread with canned salmon, chevre, minced shallots, and smoked salt. It's wonderful on rye bread and, paired with a salad, perfect for a quick weekend lunch.
A really good way to use canned salmon is remove the bones, add a tiny bit of mayo and some hotsauce to it. Then put it on a flour tortilla that you layered with lettuce, cucumber and some tomato slices. Roll up and enjoy!

Canned salmon is the perfect thing for salmon loaf. Made like a traditional meat loaf but with soft bread and the addition of mayo. I also sneak minced veggies in there too. Baked in a loaf pan until crisp on the top and tender in the centre. It is finished off with a white sauce that has had dill and hard boiled eggs added to it. Super simple, super cheap and super yummy.
