Do you have zucchini sprouting out of your ears? Tempted by mounds of shiny green squash at the market, but tired of grilled zucchini and zucchini bread? Here's one offbeat zucchini idea for you that might get you to use it up extra-quick: Sweet zucchini cobbler.
What? Cobbler? With zucchini? When I first saw this (thanks to a tip from Marisa at Food in Jars) I was sure that it was a savory cobbler — but no, Kelsey at Happyolks says that this is a sweet cobbler — an old-fashioned recipe that tastes remarkably like apple crisp.
This reminds me of the time in the Little House books when Ma baked a green tomato pie! Have you ever tried this? With zucchini? (Or green tomatoes, for that matter.) How was it?

This looks interesting....doesn't surprise me because zucchini easily takes on other flavors. i remember that my Mother used to make "Zucchini Shrimp Balls" that included shredded zucchini, old bay seasoning and bread crumbs - you'd swear they were full of shrimp!
This looks great! One of my favorite stories that my grandmother tells is of her aunt who was famous for her dislike of zucchini. My grandmother made a zucchini pie (same ingredients as apple pie but with zucchini) and completely fooled her aunt who thought that it actually was apple pie, and went for seconds!
My mother-in-law makes this and it is DEEEELICIOUS. She had to fool us into thinking it was apple cobbler before we would try it. I am so glad I did!
Ahhh! My mom used to make a "Fake Apple Pie" with zucchini. You would NEVER know the difference... So delicious! So good, my picky eater little sister loved it as a kid, but then refused to eat it once she found out it was zucchini, not apples....
The New York Times has a terrific recipe for a zucchini and pear soup, which straddles the line between sweet and savory. I like it hot or cold, as often as I can make it. So, I can totally see a sweet zucchini cobbler or crisp working well.
