Weeknight Inspiration: Made-up Meal with Bacon, Bok Choy, Sesame and Garlic

We have frugal eating and cupboard cleanouts on the brain, so we were very inspired by this photo and impromptu meal by ex.libris. She took what was on hand and... ...made a beautiful, delicious-looking meal out of just a few ingredients. She made it up with what was in the fridge. Her ingredients included bacon, shiitake mushrooms, baby bok choy, garlic, and sesame oil, and she stir fried it all up for a delicious dinner dish.

We also love baby bok choy; it's such a great quick weeknight vegetable to fill out stir-fries and last minute vegetable sides. Check out our recipe for Bok Choy with Wild Mushrooms.
