Seeing as how I constantly seem to have little containers of leftover pasta living in my fridge, I'm also constantly on the lookout for new ways to use them up. Frittatas and fritters are recurring favorites; here are four new additions to the list.
1. Pasta Bakes - Whether I have a cup or a pound of pasta, cooked noodles are a great way of rounding out a pantry-clearing casserole.
2. Single-Serving Pasta Salads - One can of tuna fish and a scoop of leftover noodles makes a mighty fine lunch. Leftover chicken or roasted veggies work equally as well.
3. Pasta Stir-Fries - A little pasta turns a pan of stir-fried veggies into a super-quick and filling dinner. I love how the pasta gets slightly crunchy in spots from the hot pan!
4. Buttered Noodles - This was a favorite in our previous leftover pasta round-up, and with good reason! For an afternoon snack, there's nothing quite so delicious as a wee bowl of noodles warmed with butter and sprinkled with salt.

There are people who have leftover pasta? Even making enough for 4-5 servings, and even though there are only two of us living in the house (me and my boyfriend), I *never* have leftover pasta after a meal! What is this strange and novel concept?!
I was taught this by a friend who lived in Rome for a few years: For a great breakfast, saute some left over pasta (any shape) in butter for a few minutes, then add 2 or 3 eggs, cook 'til the eggs are scrambled, then generously cover with grated cheese and pepper. Delish!

I love leftover pasta with butter and seasoned bread crumbs. Add grated parmesan cheese and lots of black pepper. I call it "sandy pasta".
Cook noodles, add butter, chopped tomatoes, shredded cheese, salt, and pepper. Best homemade mac n cheese. :)
best way to use leftover spaghetti (and a recipe that doesn't work well with fresh-cooked stuff): heat up butter in cast iron skillet, plop in a tangle of noodles, generously salt & pepper, slide onto a plate when the underside is golden and crunchy. mmmmmmm fried noodles
