Browsing New York Magazine's website this morning, we saw this video of Eric Ripert grilling fish on a slate tile...
His technique is incredibly simple — just some herbs, garlic, and olive oil — and he claims the slate allows the fish to cook properly without burning (and, we'd assume, losing any loose seasonings in the flames).
The presentation looks beautiful, too. Just throw that big fish on a platter and let everyone dig in.
