Thanks so much for this post! My husband went from Vegetarian to vegan recently (and I eat meat) and it's been a real struggle to keep the peace in the kitchen. Hopefully this will help!
I've been living off of Philly Cheese Seitans lately.
I appreciate that you're trying to create vegetarian and vegan content, but I've been coming to The Kitchn for many years now, and I feel like you're re-posting the same dishes over and over again. They're delicious, but I'm gonna lose it if I see that borlotti bean dish one more time.
these all sound amazing. I'm not vegetarian (anymore) or vegan strictly, but I do lean towards those tendencies and have limited my intake of red meat for the most part. I've got a picky son but a daughter that loves full flavor so vegetarian seems to fit the bill! I'm salivating just thinking about them all!!

it's by the queen of vegan, isa chandra moskowitz. Another favorite recipe of hers is Seitan Piccatta, from Veganomicon. It tastes restaurant-worthy delicious.

I thought these were supposed to be veg*n--what's with the turkey broth in the Hot and Sour Mushroom, Cabbage, and Rice Soup? Enjoy looking at most of these recipes, but that's really put me off :(
